Glazed Carrots

Glazed Carrots. There are a few recipes, well, methods for these here on Give Peas A Chance. All the methods are easy. Pick one, season with what your family likes, and DONE. The one's I'm posting today are Green Goddess Glazed. You can use a Green Goddess seasoning, like Penzey's which we really enjoy. OR if you have them, use the herbs and spices from this post HERE.
Some other ideas:
Maple and cinnamon
Dill and butter
Curry powder
Parsley

Pumpkin Spice or Chai Glazed Carrots

This is so insanely easy, it's not even a recipe. But the carrots are so very good! I promise you, EASY peasy. The kids love them. Sure they are glazed so they aren't that great for you but, once in a while you need glazed carrots.
You can do this with cubed butternut squash or cubed pumpkin also.

Ginger Glazed Carrots

We rarely eat cooked carrots except for in soups or in carrot cake around here but Piglet loves carrots and she can't really chew them raw. I usually throw in a couple carrots if i am making a soup just for her, so I thought I would try some ginger glazed carrots. Both the girls liked it. Piglet more so than Diva. No real recipe...

Cut up some carrots, pieces of fresh ginger and cover with water.

Bring to a boil and simmer until it's as tender as you want it.
Drain the water.

Squeeze in a bit of honey or maple syrup and a pat of butter. Then let it glaze over on the hot burner. Add a tiny bit of grated nutmeg and serve.

Will I ever get caught up??? 2008 Bento

I doubt it... but here are some of the kid's latest bentos/lunches and a couple of new recipes I have tweaked...

I love this box, I think it's one of my favorites. It's a stainless steel two-tiered box. Just too cute...
What's in it? A turkey sandwich on a Hawaiian sweet roll, cheese cubes, blue corn tortilla chips, and grapes. She ate everything I packed!

Tortillas and hot dogs, cubed mozzarella, and fruit skewers... if it's on a skewer they will eat it...

Pumpkin Spice and Chai Syrup

I saw this on Pinterest. Most of the recipes are standard- one part water, one part sugar, pumpkin, cinnamon, nutmeg, cloves.  I adapted those recipes to my tastes. I like my pumpkin spices to pop.  I used the same method for the Chai spiced syrup.

I am feeding my children...

I am making the girls lunches for school. I just haven't been able to sit and blog them! And when I think I have all the pictures sorted I find more bento pictures in other folders, sigh...
So there's like a ton of pictures here.

These two lunches have chicken salad, cheese cubes and whole grain crackers. Piglets has a jello cup I made in silicone cupcake cups. Diva has almonds, fruit and a prune in hers. I didn't pack much for Piglet she was home with me.

Split Pea Soup

We had ham for Christmas. Yummy ham that I glazed with orange juice, cloves, honey and a little brown sugar. NOM NOM. For leftovers Diva made us green eggs and ham and I made split pea soup.
I realize that to some people split pea soup brings flashbacks of a certain movie. So sad, because split pea soups is easy to make, smooth, creamy and pretty good for you. I have made split pea with a splash of cream, in this recipe I omitted the cream and substituted navy beans to make it creamy. I blend the beans to make the soup creamy, if you don't want to puree the beans just put them in the pot with the peas at the start of cooking and follow the recipe from there.
