Butter Chicken (Butter Shrimp)


This is a quick and easy version of Butter Chicken that doesn't skimp on flavor. It's great for those busy weeknights. I marinate the chicken the night before. I've also prepared the shallots, garlic, and ginger in a small container. Pour a tiny bit of olive oil cover it and keep it in the refrigerator until you're ready for it. My kids have prepped this for me. It's so easy.
We like this served over rice or with Naan bread or Pita bread. Any of those are perfect for soaking up the sauce in this dish.

 You can also make this with shrimp. The only thing with shrimp is you need to make the sauce first in the pressure cooker, I use an Instant Pot. Then stir the marinated shrimp into the cooked sauce, and let it simmer on saute mode until the shrimp is cooked.

Curry Chickpeas (Pressure Cooker)


Hello everyone! I know I've been posting a lot of Instant Pot/ Pressure cooker recipes lately but bear with me. Not only is this little pot quick and easy to use, there are some jobs it just shines at. Braising, stews, soups, pot roast, anything that cooks with a wet environment. "Boiled" eggs come out perfectly tender and not dry. They also slip right out of their shells. There are so many recipes I want to try and convert to Pressure cooking. Not all can be done, but it's always fun to to develop new recipes and tweak old favorites like this one to see if it can be done better. I put this in the better column for sure!

Easy Peasy Curry Chickpeas


Some nights I like to plan for something easy on the menu that takes very little time and doesn't require a trip to the grocery store. These chickpeas are quick, easy, and healthy. Diced chicken is pictured but I've made them without also. If you want to use chicken, just dice up a chicken breast and saute it to brown before adding the chickpeas and tomatoes. Leave it out for a wonderful vegan dish! This dish is very easy children can chop vegetables, saute them. They can rinse the chickpeas, or pick them over if you are using dry ones . Very easy family friendly dish! I hope you'll try it.

Palak Paneer and Cilantro Naan


Thanks to Brandie of The Country Cook for coming up with Household6 Cooking Club's  challenge/theme for April.  She gave us a task to create a meal or a dish from a country you have been stationed in, lived in, visited, or would like to visit (America excluded). It can be a main dish, side dish, dessert or drink or all of the above. Tell us the story of why you chose it and if it has any special meaning to you or your family.
  
This challenge was so difficult for me to narrow down. I wanted to pick so many countries. Japan, Spain, France, Thailand, Laos. I was going to do Laos then decided on India. I've never been to India, but I would love to go. Walk up and down the open air markets, the smell of spices in the air. The hustle and bustle of people, so much to see and do. So I made this meal for my family. What about you? What country would you have picked?

Indian Meal
Chicken Tikka Masala
Palak Paneer
Whole Wheat Cilantro Naan
(I also made some coconut flour pancakes so I could have some bread to soak up all juices from the meal.)
I also put out the candy coated fennel seeds- which we all love, even Pixie loves them.
