Pumpkin Cream Churros- Disney World

I haven't blogged in forever, but iceI've got so many yummy food posts from Universal Studios Orlando and Disney World that I can't wait to share with you all. I wanted to ease into it by sharing these Pumpkin Cream Churros. 
In general I do not eat Disney Churros (or most Churros). If I want  Churros I go to a Churro shop in my home town where they pipe them fresh and fry them to order. Even then I don't eat a whole one. They tend to be sweet and greasy.  My children ordered Churros  at Marimoto for dessert and they were meh, better than most but not really that great.

Pumpkin Cheesecake Bundt Cake
Sometimes you can cake, sometimes you want cheesecake. Sometimes you want both. This cake is similar to the Pumpkin Spiced Cheesecake muffins we love. Layers of pumpkin cake, a layer of cheesecake filling, topped off with a cinnamon streusal or a pumpkin spice glaze. Despite all the layers it's very easy to put together and bake up. This is the perfect coffee cake, Afternoon tea cake, or after meal dessert.

(Winter Squash) Pumpkin Puree- Instant Pot

Instant Pot Pumpkin Puree ready for the freezer.
It's Pumpkin season y'all! Before we go any further, I mean: it's winter squash season y'all! We are huge fans of winter squash around here. So many varieties to choose from, SO yes, make pumpkin puree. But don't forget all the other wonderful varieties which are great for both savory and sweet applications!
Any of these winter squash can be made in the Instant Pot, oven, or slow cooker.

Pumpkin Butter and Pumpkin Butta (Instant Pot)

Pumpkin Muffins slathered with Pumpkin Butta? Yes, please.
PUMPKIN SEASON IS UPON US! I love pumpkin. Love seeing those cute little sugar pumpkins pop up in stores and at the Farmer's Market. Not that I go to the Farmer's Market a ton. I love sweet pumpkin treats and like to have them year round. These two recipes can be made during peak pumpkin season and kept in the freezer to be enjoyed later.

Pumpkin Roll

Yum yum. I used the Libby's pumpkin roll recipe for this. I changed a few things around. I used my Pumpkin Pie Spice mixture. I used more cream cheese in the filling, and added a pinch of Pumpkin Pie Spice. I also added more vanilla to the batter. I may type up my changes later, but for now, find the recipe here on the Libby site.

Pumpkin Spice Glazed Pumpkin Seeds


These Pumpkin Spice Glazed Pumpkin seeds are crunchy and spicy. Use these to top salads, yogurt, soups, hot or cold cereal, stir them into granola, or use them for a special treat. They are like candy. Put them over the scones I just posted last week/
Simple to make you can swap out the seeds for walnuts, pecans, cashews. Whatever you like.
I sprinkled them on Pumpkin Spiced Caramel Rolls.

Pumpkin Scones with Maple Glaze


There's something about light fluffy scones. A hot cup of tea. These scones have a wonderful pumpkin flavor and the ginger chips add a nice warmth. We love us some crystallized ginger around here. If you don't like maple, a white chocolate drizzle would be good also.
These freeze well, wrap them up good individually. Bring to room temperature and warm in a toaster oven or microwave if you have one for a short period of time.

Pumpkin Pie Spice



It's almost here! Fall! I'm so excited. I love fall weather, gorgeous fall leaves, boots, and pumpkin, pumpkin, PUMPKIN! I'm finally getting around to sharing how I make my Pumpkin Pie Spice with you! I love mixing my own spice seasonings, I can tweak them to our liking.
This pie spice is fragrant and flavorful. I used some whole spices, but pre ground works great. Sometimes I add powdered vanilla to this mix also.

Pumpkin Spiced Caramel Rolls


I can't tell you how many times I've made these, tweaked this, baked these, tweaked some more. I mean really. It's one of those things where I would bake them, and we would like them, but I wasn't jumping up and down. I wanted some Pumpkin Spice flavor, pumpkin flavor, I wanted tender rolls, gooey caramel, then I wanted cream cheese glaze, crunchy seeds, no seeds. I finally tonight made some that I just think are PERFECT for us. I may at times leave off the Pumpkin Spice Glazed seeds, I may use a Maple Cream Cheese glaze. But the Pumpkin Spice caramel roll is so good as pictured above. The tender pumpkin spiced dough, the gooey caramel, the crunchy candied pumpkin seeds. SO perfect. I also have thrown the flour, yeast and heated pumpkin mixture into my bread machine to let the machine mix, knead, and proof for the first rise and it's worked beautifully.

Pumpkin Cheesecake Snickerdoodles

I took these pictures with my phone, sigh. Oh well, the cookies though? The cookies are AMAZING. DH's favorite cookie I think is the Snickerdoodle. I'm a pumpkin fanatic so you know how that goes. Give a little, take a little, then add cheesecake. Why not? Match made in heaven. Tender cookie, smooth cheesecake filling...

Pumpkin Spiced Cheesecake Muffins


Okay, these are probably my favorite muffin I make. Really. I've copied and pasted the original post below with some changes I made this time, which I puffy hearted. It's a shame my only camera right now is my camera on my phone, I would have liked to update these pictures better. These muffins taste like a moist Pumpkin Spiced cake, with a layer of cheesecake baked right in. I'm renaming them. SO good. I mean it. They are SO good. Try them. Pumpkin Cheesecake Squares

It's pumpkin season y'all, like you haven't read that 10 times already on this blog. I'm not going to apologize. I'm just a huge pumpkin fan. I made these Pumpkin Cheesecake Squares using this recipe HERE. Pixie helped me. It was a test. I'm so please with the way these turned out. The only thing is I used those crescent rolls that that says 65% bigger. Don't do that. They (in my opinion) are too big!

GPAC Pumpkin Pie Shakes (GF/DF options too)

 It's pumpkin season! I love pumpkin. These Pumpkin Pie Shakes are the BEST. It's like drinking a piece of pumpkin pie. I first posted them in 2008, HERE. I've made pumpkin pie, just so I could make these shakes. I'm serious. If you have leftover pie- I don't even know what that is, but if you have leftover pie, you can cut it into small slices and freeze them. The shakes stay nice and cold when it's frozen.
You can make these shakes if you don't have pie, or if you prefer a gluten free/dairy free option. Both are easy peasy. You can use Coconut Dream ice cream, frozen yogurt- plain yogurt frozen in an ice cube tray works awesome, any kind of milk you like. If you want the texture of crust, almond meal sprinkled on top of the gluten free shakes is yummy.

GPAC Pumpkin Cream Cheese Spice Cake

 It's PUMPKIN season!! YAY! I LURRVE pumpkin. Go type in "Pumpkin" in the search box to your left, and you will see how much. Pixie my four year old saw sugar pumpkins at the grocery store and started clapping, "they have pumpkins!!" So yes, pumpkins are a huge deal here. I either bake, steam, or put them in the crock pot to processes them. Then the seeds- NOM NOM, roasted of course.

I love pumpkin. I usually stock up on it in the fall. Both pumpkins to process and freeze and canned pumpkin. I have an abundance of canned pumpkin right now that I needed to use up so I don't have to store it in my tiny kitchen. I also have quite a bit of coconut milk since it was on sale. So, I thought, what should I make?

Maple Glazed Pumpkin Cake


I feel like I've been slacking on the pumpkin recipes! :P I've been so very busy, it's crazy. Just like everyone else I'm sure. I am, again, backlogged. But I thought I'd share this quick and easy cake. The glaze is just a quick one whisk together, melted butter (1 tablespoon), maple syrup (2-3 tablespoons), powdered sugar. Add milk to thin if needed.

Pumpkin Pie Shakes - variations

Yes, I've posted pumpkin pie shakes before, here's the link. I keep making them. So good. Here are some variations
- add some of this... either one NOM NOM.
- make a crustless pumpkin pie, use yogurt in place of ice cream for a smoothie
- sprinkle the top with ginger snaps or graham crackers
- use coffee ice cream (NOM NOM)
- add a dash or pumpkin pie spice, just realized I never posted my pumpkin pie spice recipe! Oops.

Pumpkin Spice or Chai Glazed Carrots

This is so insanely easy, it's not even a recipe. But the carrots are so very good! I promise you, EASY peasy. The kids love them. Sure they are glazed so they aren't that great for you but, once in a while you need glazed carrots.
You can do this with cubed butternut squash or cubed pumpkin also.
