Chocolate Chip Toffee Cookies (Chewy)

Rich, flavorful, chewy with crispy edges. I love chocolate chip cookies and this recipe has all the elements I just mentioned. The browned butter and dark brown sugar give these cookies a butterscotch toffee flavor and the dark brown sugar makes them chewy. I do have quite a few other recipes on this blog.  I can't help it. This one, the Gideon cookies, the Kiss Me  Chocolate Chip Cookies, so many yummy ones. Just pick one, the Skillet Chocolate Chip cookie is the easiest.
As far as this recipe I will definitely make them again. With or without the Toffee chips. I would love to put nuts in them, but my child can't eat nuts. I use less chocolate and toffee in these than most people would but we love the cookie like this.
This is a great batter to customize.

Copycat Gideon's Bakehouse Cookies

I have so many Chocolate Chip Cookie recipes on this blog, but let's face it, sometimes you want them chewy, cakey, extra chocolatey. Mood. Right? For extra chocolate richness, this is the recipe you want. If you've ever been to Gideon's Bakehouse or the Polite Pig at Disney Springs you may know about these cookies. Voted the best cookie in Florida they are really yummy. There's rich chocolate, vanilla, and a tender cookie that's a little underbaked but not raw. They are in my top two favorite cookies at Disney Springs, the other being the Jammy Dodgers at Cookes.

Bunches of Berries in Bars


One of the fantastic things about our move is that I found a great wholesale fruit and vegetable source. I admit, typing that out it sounds lame. I'm okay with that though because this awesome place will have avocados by the case, 48 for $37.50, blueberries in 9 ounce packages 12 for $7-10, 12 ounce packages of raspberries 14 for $14, 10 artichokes for $8,  organic packs of produce that end up being $1 a pound. It's amazing and awesome. That's how these bars came about. We love fresh berries and were eating them by the handful. The kids were taking 14 ounce packs of raspberries for lunch.  I purchased 28 packs. Yes 28. In the end I had 3 packs that needed to be used up. We ate a bunch. I still have blueberries in my fridge that I can freeze for later also.

Gluten Free/Dairy Free Coconut Pandan Waffles


You guys. These waffles are so good. I love Coconut Pandan Waffles anyway. I used to make batter and keep it in the fridge for snacks or a quick breakfast. While I don't have any gluten intolerance, or dairy intolerance I just finished a Whole30 and feel really good. I'm less bloated, sleeping better. So I try not to goo crazy with the things that do make me a little bloated, like wheat. I am finding that I sleep better if I don't have it for dinner or later in the day. I'm still narrowing it down and keeping mental notes, I should keep a food journal. But that is a whole other post. Back to these great waffles.  I'm literally not missing the wheat flour in my Coconut Pandan Waffles because of this recipe. I'm not missing the butter either. I wasn't sure how to change this recipe, originally I thought I would just try half rice flour and half tapioca, I figured it would work. Then I walked in my pantry and thought I'd try the oats because we do like oats in our pancakes and oats make cookies chewy. So I tried it, what could go wrong right? Nothing went wrong. It went right. The first time. So there was no need to try the just rice and tapioca flour.

Non-Dairy Creamer, Paleo Coffee Frappe

Non-Dairy Creamer that is Whole30 and Paleo compliant.
If you've been following my Instagram (@peasknees), you know that I recently finished my first round of Whole30. I had a whole month where I didn't drink any coffee. I drank tea twice with this "creamer" like this, and the rest of the time I drank my tea plain. I have to say I really missed my cups of tea in the afternoon with half and half and sweetener - which is normally one dehydrated Stevia leaf. I still miss sweetener but I found something I really enjoy in both coffee and tea. Cold or hot.  This doesn't taste dairy half and half. But it makes drinks creamy and adds flavor. It's really good.

Sopapillas

Sopapillas
Sopapillas are a New Mexican food that is much like Fry Bread. They are hollow because they puff up when fried. Almost like a roll in other parts of the country, they are served as such. They are served with meals, sometimes they are stuffed with taco meat, beans, etc. For a sweet treat they can be drizzled with honey. You can fill them with ice cream and top with chocolate sauce.
I spell sopapilla with out the "i" after the first a, that's just how I grew up seeing it spelled. Though I have seen it spelled sopaipillas. They are not strictly New Mexican, you find them in both Mexican and Spanish cuisines. But I grew up eating them in New Mexico.

Thin Mints Milkshakes And Other Girl Scout Cookie Shakes


We have a girl scout in house and it's cookie season! My favorite is the Thin Mints, I try not to eat too many of them. I could eat a whole sleeve in one sitting and I used to. But I've been really good, maybe it's because there's such an abundance of them around here. I decided to make the kids some milkshakes for an after dinner treat the other day. These are simple and quick to make. They are also very yummy.

Kitchen Sink Chunk Cookies


The weather is getting cooler around here, it's a rainy morning so I'm sitting down to update. With a cup of tea at my side and cookies... you know, so I can taste the to make sure they are still yummy. To post, because I don't want to post cookies that aren't still yummy. I better have two just to make sure :). I let my kids have one after breakfast, two days in a row now. I'm cool like that.
How is the weather where you are? I'm so ready for fall. My parents are planning a visit. I can't wait. They will get to see the leaves change color, come to a couple soccer games. It'll just be nice having them here. Maybe I should makes some of this cookie dough to keep in the freezer. Because cookies.
I like this Kitchen Sink Chunk Cookie recipe because it doesn't require me to think ahead and soften butter. I think most of the Chocolate Chip Cookie recipes and cookie recipes that I like use melted butter. I will say I like cookies that are chewy, so I prefer using bread flour. You can swap out AP flour in equal amounts if you prefer, or if that's what you happen to have on hand. Adding oats would also be easy to do, swap out some of the flour for rolled oats, or use some as your mix-ins. This recipe is easily tweaked. See the notes below for variations.
I used dried tart cherries and chocolate bars for this batch, because I didn't have any chocolate chips in the house! Yikes.

Roasted Winter Squash Seeds

I can't tell if I like the seeds of winter squash more, or the actual squash. I think it's pretty even. The seeds though, perhaps because there's less seed to squash ratio, are a huge hit around here. Recently I've been cooking squash and prepping some for our freezer. That means we're lucky to also have lot of seeds. I roasted these with salt and my Creole seasoning blend, which you can find in my Jambalaya post.

Cranberry Orange Muffins

Cranberry Orange Muffins
Cranberry season is upon us! I don't know what it is about cranberries. I only make a handful of things with them but I really like them. I don't now if it's the tart berry flavor, that they are good in both savory and sweet applications, or that the color just screams "HOLIDAY SEASON APPROACHING" Whatever the case I smile when I see them, and I always grab an extra bag of cranberries for the freezer for the rest of the year for that bright flavor they give.
I also love seeing them on a tree at Christmas, it's so pretty. They aren't the easiest to string but I think it's worth it, here's our tree from last year. Very simple.

Masala Chai


Masala Chai is one of my oldest child's favorite teas, it's also one of my favorites. In the Fall and Winter we'll make some in the cool mornings. I put some in a travel mug for her to take to school. This can easily be done on the stove top or in the pressure cooker. I started doing it in the pressure cooker because on the stove top it can boil over so you have to baby sit it a little bit more. Making sure you don't let the bottom scorch is another thing to watch for using the stove top method. But both methods yield a flavorful spiced Masala Chai, both easy enough for my child to do on her own. Granted the boiling over was an issue the first few times. But she got better at it as the school year passed.

Quick Vanilla Lemon Curd with Vanilla Bean Yogurt


Let me start off by saying that I will never never make Lemon Curd any other way as long as I have an Instant Pot. It's so ridiculously easy. There's no standing over the stove making sure this doesn't scorch on the bottom. It only takes like nine minutes of cooking time. I keep using my Instant Pot more and more. The yogurt was also made in the Instant Pot. Both were pretty hands off, other than the straining bit for the yogurt.
If you like a certain yogurt that's sold in what looks like deli containers, that's starts with the letter "N". I'm telling you this is better. Granted it's not as sweet, but I prefer not as sweet.
The Lemon Curd is perfect for scones, on top of ice cream, yogurt, in between layers of sponge cakes, on top of cheesecakes. I've eaten it off of a spoon. It also freezes well if you ever need to use up a bunch of lemons.

(Blue)Berry Sweet Rolls

Hello everyone! I haven't blogged in awhile. We've just been busy with life and spending much needed time with family. God has been so good and so faithful to us during this season of our lives. In mid April my dear cousin went home to be with the Lord. While we have been so comforted knowing that we will see her again we miss her dearly and know that her young children and husband miss her even more so. Please keep them in your prayers if you think of us! There's so much I could write about and tell you, but I'll save that for another post. For now I'll hold the memories and moments that God has carried us through close to my heart.
I think I mentioned on Facebook that  I have a fajita salad recipe/post coming up soon. I'll have that up probably next week. Until then, you must try these Blueberry Sweet Rolls. I have the blue in parenthesis because you can you any berry you like!

Apple Snack

 It's funny, I thought I blogged this year's ago, but I can't find it, just references to it. It's like it's elusive. LOL.  I've never blogged it because it's so simple but it's one of our favorite ways to eat apples. The simple ingredients. Apples, an orange, and half a lime. That's it. But it's so good.

Lemon Blueberry Oatmeal Cookies


How beautiful are these Lemon Blueberry Oatmeal cookies? Studded with plump blueberries and drizzled with a lemon glaze that give them just the right amount of sweet and tart. These cookies are soft and chewy, perfect with a cup of tea or for a sweet treat after a meal. I use frozen berries that we picked, but you can buy store bought berries. These cookies travel well and are the perfect reminder that spring and summer will soon be here.
Get your kids in the kitchen this is a recipe that they can either help with or do all on their own. I hope you all are having a wonderful week and as always, thank you for reading this little blog.

Pumpkin Roll

Yum yum. I used the Libby's pumpkin roll recipe for this. I changed a few things around. I used my Pumpkin Pie Spice mixture. I used more cream cheese in the filling, and added a pinch of Pumpkin Pie Spice. I also added more vanilla to the batter. Pumpkin Spice Glazed Pumpkin Seeds


These Pumpkin Spice Glazed Pumpkin seeds are crunchy and spicy. Use these to top salads, yogurt, soups, hot or cold cereal, stir them into granola, or use them for a special treat. They are like candy. Put them over the scones I just posted last week/
Simple to make you can swap out the seeds for walnuts, pecans, cashews. Whatever you like.
I sprinkled them on Pumpkin Spiced Caramel Rolls.
