Crunchy Pork Belly

I find this method the easiest way to get crunchy pork belly. You can season the pork however you like. I've done Five spice,  char sui style. I only season the underside before putting the pork under the broiler. The skin doesn't need seasoning and it'll burn off under the broiler in the oven anyway.

Crispy Duck Gaeng Phet

You need to make this. You do. It's FANTASTIC. You can make it as spicy as you like. If you want to make it without the duck and throw in extra vegetables and/or tofu that would be wonderful also. The flavors in the Thai red curry are bold and flavorful - kaffiir, garlic, onion, lemongrass and more. The duck has crispy skin and is tender and juicy, not dry and tough. The Chinese five spice is subtle and fragrant, perfect with the curry. I made this spicy, so I made the girls their favorite Thai Basil Stir Fry with ground turkey.

Lao Omelet


Lao Omelet- is there such a thing? I don't know. But my mom used to make this and we'd have it with sticky rice or jasmine rice. This omelet has crispy sides and is drier or more well done than a fluffy soft Western omelet.  Sometimes she would put both sliced tomatoes and chives, just chives and or green onions in it. Really, just whatever we had on hand. I put oyster sauce, a little soy sauce OR nam pla with a little bit of white pepper in with the eggs also. I *think* my mom did also. I don't remember. I also love putting red pepper flakes on top. This omelet, Lao beef jerky, steamed vegetables like broccoli and cabbage with nam pla dipping sauce. YUM. The girls love sticky rice, so it's always a hit.
No real recipe, just eggs scrambled with seasonings and herbs and/or vegetables.

Tomato and egg "omelet"


I am not sure I would call this an omelet, but I guess it is. My mom used to make this for us when we were younger to eat with rice. She put sliced onions in it also. It is more well done and drier than Western omelets and has crisp edges.  Here's an updated post on these omelets.


eggs
oyster sauce
sliced tomatoes
Sliced onions
black pepper

Sometimes it has fish sauce or soy sauce


I used four eggs.







About 1- 1 1/2 teaspoons oyster sauce.










Black pepper and some sliced tomatoes, I used cherry because I had them out already.






Scramble it up.










Heat some oil in the pan.







Pour it all in. Med heat.









Once the bottom starts to set lift the sides a little and let some raw egg run underneath to cook.







Let it cook for a little bit.









Flip it over.
Let it cook for a little bit more.
Serve with rice.
