Dalgona Coffee

 Dalgona coffee seems to be the latest trending recipe. It's so easy with minimal ingredients that we decided to try it. Minimal ingredients is a must while we shelter in place due to this COVID-19 pandemic.
I made the first glass according to what I've seen online. Equal parts water, cane sugar, instant/crystallized coffee. For us this was 2 teaspoons of each.  I don't like my coffee strong, the recipes I've seen call for a tablespoon of each ingredient. This whipped up fast and formed pretty soft peaks. It was really sweet though.

Butterfly Blush- Color Changing Sushies


Hello everyone! Sorry I've been so absent. I hope you are all doing well! My youngest recently had a birthday party and I wanted to serve something fun to go along with the roll your own spring roll bar we had. I thought about having a bubble tea/boba tea bar but I wasn't sure which flavors to offer and such. Looking in my tea cabinet I saw my jar of Butterfly pea flowers. I make tea with them and cook with them quite a bit. I though they would be fun to use.

Freezer Tip: Spa Water Add Ins


Quick freezer tip for infused waters here today! I usually drink water all day, with a cup of tea in the afternoon. Sometimes I'll infuse my water with herbs, fruits, and/or vegetables. It's refreshing and healthy!

Non-Dairy Creamer, Paleo Coffee Frappe

Non-Dairy Creamer that is Whole30 and Paleo compliant.
If you've been following my Instagram (@peasknees), you know that I recently finished my first round of Whole30. I had a whole month where I didn't drink any coffee. I drank tea twice with this "creamer" like this, and the rest of the time I drank my tea plain. I have to say I really missed my cups of tea in the afternoon with half and half and sweetener - which is normally one dehydrated Stevia leaf. I still miss sweetener but I found something I really enjoy in both coffee and tea. Cold or hot.  This doesn't taste dairy half and half. But it makes drinks creamy and adds flavor. It's really good.

Bubble Tea, Boba, Tapioca Pearls

Masala Chai


I have for you a Whole 30 Masala Chai. Because it's a cold rainy day, and cold rainy day's call for a lovely cup of tea. Okay, any day in my book. But here we are. This original recipe can be found HERE. If you are eating paleo, add a little sweetener.

This recipe is easily scaled down to make one cup. It's about 1/4 cup water and the rest milks. I use one tea bag. Put everything in and cook in the Instant Pot for 5 minutes.

Thin Mints Milkshakes And Other Girl Scout Cookie Shakes


We have a girl scout in house and it's cookie season! My favorite is the Thin Mints, I try not to eat too many of them. I could eat a whole sleeve in one sitting and I used to. But I've been really good, maybe it's because there's such an abundance of them around here. I decided to make the kids some milkshakes for an after dinner treat the other day. These are simple and quick to make. They are also very yummy.

A Bee, and a Mango Lassi

The method below is just a method, adjust flavors to your taste. The lassi I'm writing about is a sweet, not salty lassi.

Masala Chai


Masala Chai is one of my oldest child's favorite teas, it's also one of my favorites. In the Fall and Winter we'll make some in the cool mornings. I put some in a travel mug for her to take to school. This can easily be done on the stove top or in the pressure cooker. I started doing it in the pressure cooker because on the stove top it can boil over so you have to baby sit it a little bit more. Making sure you don't let the bottom scorch is another thing to watch for using the stove top method. But both methods yield a flavorful spiced Masala Chai, both easy enough for my child to do on her own. Granted the boiling over was an issue the first few times. But she got better at it as the school year passed.

Masala Spiced Almond Milk

This is such a delicious almond milk. I don't sweeten our almond milk at all. Sometimes I throw a cinnamon stick in the blender and that adds some sweetness already, you can also throw in  pie spices, cardamom, nutmeg, ginger, medjool dates, banana... whatever you like.
Diva picked this as a healthy snack to give to her teacher for Teacher Appreciation week. YUM.
For this milk I used this same method posted here. It's so simple. I do have a nut bag that I use now that makes squeezing and straining so much easier. The children can help with this one, or do it on their own.

I added my own blend of Masala Spices
Ginger (dried or fresh)
Whole Black Peppercorns (6 or so)
Whole Green Cardamom (5 or so)
Cinnamon flakes or a stick is fine (1 stick)
All Spice (4 pieces)
Cloves (3-4 pieces)
Nutmeg (1/4 teaspoon grated, or used the pieces that are too small to grate)
If you wanted a sweetener a few dates or honey would be great in this.
