Ajitsuke Tamago Ramen Eggs

 Ajitsuke Tamago Ramen Eggs.  We like these with Ramen bowls, on chilled noodle salads, with sticky rice, as a snack. They are very easy to make. I like the eggs soft boiled, my middle child likes the eggs medium set.  So, cook the eggs to your liking.


Play with the spices you add to the marinade as well. Try five spice, make them spicy, leave out all the spices. Also adjust the water to your liking. Less water, the eggs will be more salty. Time spent in the marinade will also determine how salty the eggs are.


It is not necessary to move the eggs around in the marinade as long as they are covered.  If you don't mind white spots on the eggs from where they are touching the sides of your container and each other just put them in the marinade and put them in the fridge. If the white spots will bother you, move the eggs around so they are evenly colored.


I make the eggs in the Instant Pot because it gives me consistent results. It doesn't matter how you cook your eggs, as long as they are cooled and peeled.

Chinese Egg Noodles (Philips Pasta Maker)

Not too long ago my husband purchased a Philips Pasta Maker for me. I wasn't sure how I would like the machine, originally I just wanted something to roll and cut noodles for Khao Piek Sen. Nothing fancy. I have been using this machine for all sorts of noodles, curry flavored, black pepper, Italian basil, etc. It's really easy to use and it's pretty fast. Ten to fifteen minutes a cycle. For regular pasta I use one cycle and my water is ready and boiling on the stove by the time it's done. I have made the Khao Piek Sen in this machine also, I'm pleased with the results. I did have to tweak my original recipe and got help from other pasta machine owners. That's a whole other post though.

Double Pan Fried Noodles or Mee Korb

 Chinese New Year comes early this year so I thought I would share a favorite noodle dish around here. Double Pan Fried noodles are an absolute favorite way to have noodles at our house. They have always been a childhood favorite of mine also. If you haven't had them, make sure you try them the next time you're out for Chinese food. Or make them at home.
You can use any vegetables or protein you like for this, just stir fry it all up and ladle over the noodles. YUM!

Lao Steamed Egg with Minced Pork

Lao Steamed Egg Instant Pot method.

 This is another one of those dishes that I grew up with that I love to eat but just never blogged. I don't have a ton of Lao recipes on this blog because... well because they are dishes that I just make. I never sat down to take measurements of them. I didn't grow up with measurements while cooking them, Neither did my mom. I realize that these may be the recipes the kids want someday. So I'm trying to get through them and post some as much as I can. This dish makes me think of my childhood. I hope you'll try it.
This was steamed in a 8 inch pan.
My mom would make this in a steamer on the stove. I have included instructions for stove top steaming and pressure cooking. I use an Instant Pot. I am sure you can use another pressure cooker though.

Coddled Eggs (Oven or Instant Pot)

Perfect Coddled Egg breakfast, but this was our dinner..

I don't think I've ever blogged Coddled Eggs, which is surprising because they are one of my favorite ways to have eggs. I used to bake them in a oven in a water bath and I'm just not a fan of messing with water baths. These can still be made in the oven or simmered/steamed on the stove, but my Instant Pot makes them in about 1 minute cooking time. Which means we have them more often! That's what we'll do today. 


This is a method so I kept the recipe very simple. You can put whatever you want in with your eggs, butter and cream are standard to me. You can add grated cheese, chopped ham, cooked chorizo, sauteed mushrooms, fresh spinach, asparagus, use bacon grease to grease the Coddlers. Don't like cream? Umm.. leave it out, but try it with too! Spice up your Coddled Eggs with different herbs and spices.
For something completely different, use a tablespoon of  Dashi stock and a little soy sauce with a sliver of ginger.

101 ways to make a Quiche

Broccoli Cheese Quiche, Creamed Spinach Quiche, Zuppa Toscona

Our quiche recipe is so simple. It may not be gourmet, but it works so well for us. My 8 year old made these two with leftovers. I had leftover steamed broccoli and leftover Creamed Spinach in the fridge. I did crimp the pie crust- we used refrigerated pie crusts. I also put them in the oven and took them out. 
Quiche freezes well, so I'll be cutting into smaller portions and put them in the freezer. They will be perfect for a quick lunch with a salad. The soup posted above is our version of Zuppa Tuscona.

Roasted Salmon with Asparagus Topped With A Poached Egg

This is such a simple meal but it's so good. You can poach the salmon or put it in the oven. Asparagus is in season so we're loving that. I used a Hiwa kai black salt to finish the dish.
No real recipe.
Blanch the asparagus, then put it in ice water. Drain and set it on the plate.
Salmon- I roasted this in the toaster oven with a little bit of ghee, salt, and pepper.
With the same water that I blanched the asparagus in, I poached the eggs.

Pad See Ew

This is one of my favorite noodle dishes to order at a Thai restaurant. Both Pad See Ew and Lad Na. I love ordering these dishes out because most of the time they are so very good. I've mentioned it lamented about this before, but it's those darn BTU's that those pro stoves are pumping out. Such delicious hot wok flavor. My girls and I love it. I very very rarely, to never order Pad Thai. Just not my thing to eat out I guess.
This Pad See Ew is very easy to make, you can use pantry staples. If you can't find Chinese broccoli, substitute regular broccoli. I've done both, and so has my mom.
I have used both dry and fresh noodles while making this. The last two times I've made this I used dry noodles, because the fresh ones in store lately have had peanut oil tossed in with them to keep them from sticking. There's no way I'd risk that with Diva. If you can find the thick fresh rice noodles, skip the soaking step. Bring them to room temperature before separating them by hand into a big bowl to prepare them.
Black soy sauce is thicker, and has a different flavor than regular thinner soy sauce. It's not hard to find at most Asian markets.

Manic Monday- Rice Paper for Spring Rolls


My mom got me these cool things for my spring roll wrappers. They are like plates but they all have grids/holes on them. Like a screen or a drying rack. It's nice because the rice paper doesn't get overly soggy. Once I dip the sheets of rice paper I can put them on these racks/plates to soften. They stay flat and ready for wrapping. She got these from the Asian Market.

DH's Cheesecake Squares

My husband has been making these since I first met him. He brought them to a College and Career Ministry (GAPP) Thanksgiving dinner. They are so easy to make and there's never an empty pan if we take them somewhere.
The Pillsbury website has them down as Sopapilla Cheesecake. DH makes them basically the same, except with twice the filling, no cinnamon, less sugar, and he doesn't measure. He also brushes the top with egg white, not butter. Sometimes he does put a pan in the oven under the squares, since he uses so much filling, to prevent the bottom from browning too fast. I just put the baking dish on baking sheet with a silpat on it, to protect the bottom.

Glow in the dark Easter egg hunt

A friend of mine did an egg hunt for her girls with glow sticks and plastic eggs. It sounded like such a cool idea, and cheap too! Glow sticks can be found at Target here for 15 for $1. I save our plastic eggs each year, but this year  I did buy a pack, for $1. We only did 45 eggs.
So when it go dark DH, filled and hid the eggs. The girls were so excited and had so much fun. The girls, especially Piglet, kept saying over and over. BEST. EGG. HUNT. EVER. lol, then BEST. DAY. EVER. She really reserves those "best. days. ever." for stuff that makes her giggle and laugh uncontrollably. This is a win. The funny thing is, I put Pet Shop Toys and Squinkies in the big eggs, so maybe 10 eggs? If even. When the girls were done and breaking the eggs open, they just wanted the glow sticks. So they could take a bath.
I got to practice taking low light pictures manually, so I'm sorry you get the brunt of that. But at least you get an idea of how much fun it was.
We have been doing our egg hunts and baskets a week or so after Easter, last year we did our egg hunt almost a month after we were so busy. But it's perfect because we get to focus on Jesus on Easter Sunday.

When I grow up, I wanna be a Roti...

 I've posted these before, here.If you haven't tried them, you should. They are my mom's shortcut Roti. I haven't changed much of anything. These are so simple. They aren't good for you, but they taste so good. These still remind me of my mom and special treats. We didn't have these often but I certainly remember them.
You can fill them like crepes also, but they are thicker.

Baked, not boiled, eggs

Gotta love Pinterest! I saw this on there.  But it's originally from an Alton Brown book is what I'm gathering. Instead of boiling eggs in water, you can bake them. Especially if you have a ton of them to cook.
I put a cookie sheet under the rack in my oven. Put the eggs on a oven rack that is in the middle of your oven. Bake the in a 325 degree oven for 30 minutes- hard boiled. Once done, run them under cold water or put the in an ice water bath to stop the cooking. The brown spots on the outside that you see in the picture come right off in the water. I did notice some brown spots on my peeled eggs. All in all, this was great for large batches of eggs. They peeled nice and I did not have fresh eggs.

Challah- Bread Machine

I adapted this recipe from HERE. I use my bread maker/bread machine for the dough. I tweaked the recipe a little bit. I add vanilla if I am going to make french toast. I know it's not traditional, neither is the wheat gluten. Spices can be added to the dough. Cinnamon sugar can be swirled into the braid.
This bread is perfect for grilled cheese, french toast, toasted, not toasted, with Sunbutter and jelly... it's just good.

(Breckist cast roll) Breakfast Casserole

My husband doesn't like quiche. But he'll eat this. There's no real difference except crust IMO, but there you go.  This is quick, easy, VERY adaptable, and can feed a crowd. We don't really eat a lot of white potatoes around here so I don't put that in our casserole. But if you want to throw in some potatoes (regular or sweet) that were sauteed in butter with onions that would be good! Just make sure they are cooked. Add other vegetables- roasted green chilies, broccoli, tomato, cubed sauteed pumpkin and more. Try using bacon, turkey sausage, Canadian bacon- whatever.  Make a pizza one with pepperoni and pizza toppings. Serve with hot marinara sauce for a fun diner. This is primal friendly too. The sausage I use has no MSG or sugars added. You can also use ground pork and add sausage seasonings.
Diva was my note taker when I was making this. She also did some whisking and cracked all the eggs. I love her little notes and drawings so I take pictures of most of them. Here are her notes from this recipe. It looks a lot like my note cards actually. LOL. At least she put a title. I end up having to guess what my list of ingredients is for. "Breakist cast roll"- awesome. And she loves me too. Even more awesome.

Let's get this- Day two and some shortcuts with food prep


I feel yucky. My body is so used to junk. I think I'm craving sugars, something chewy and yeasty- grains, brownies... Georgetown cupcakes. I'm not hungry, it's not like there's food I can't have. I'm going to keep plugging and see how this goes for the next couple of weeks. After I've done this for a couple of months I might add legumes. I'm not sure, we'll see. I feel like my blood sugar is low. It probably is not having refined sugars. I need to eat more fruit. But my blood sugar has been feeling this way for the past three weeks. This is nothing new. I just can't break off a piece of chocolate to bring it up. I have to make smarter choices.
For breakfast I had three eggs, sauteed mushrooms, onions, jalapenos and bell peppers- I also used hot sauce. Leftover Cirtus chili center cut pork slices and strawberries with Jalapeno Lime salt. Let me clarify I had whatever my 2 year old  didn't take off my plate. My oldest had this for breakfast... and some of my strawberries. For ease during the next three days I sauteed extra veggies to keep in the fridge for a quick omelet, to throw in a sauce, lettuce wrap or salad. It's a wonderful shortcut if you want omelets during the week but don't have time to chop vegetables.
