Chile Rellenos are one of my favorite foods. Has to be without meat. Made with roasted Hatch Green Chile, or Poblano peppers. Definitely NOT made with bell peppers. There's no spice in them and I like spice. I've had them with all three peppers, Hatch, Poblano, and bell pepper at restaurants. Some stuffed with meat (the later two). Some with sauce, some without. SO many different variations. I prefer the New Mexican version.

Green Chile Chicken Soup

Whole30 Green Chile Chicken Soup |
This soup is just something that you can do with leftover chicken. I use the bones to make a stock and build the flavors from there. You can find my stock method here. I have green chile roasted in my freezer. If you can not find Hatch Green Chile, you can substitute roasted, peeled Poblano peppers or Anaheim peppers. They won't be the same but they will be good. I actually ran out of what is pictured below and had to order some online.
Once you have those ingredients on hand it's really easy. There's only a ten minute cooking time in the Instant Pot, plus about 5 minutes resting time. You can get this on the table in under 30 minutes even if you use a pot on the stove though.
This isn't an authentic Green Chile Stew, it's a quick complaint Whole30 soup that is flavorful and delicious though. It's perfect to have for leftovers also.

Green Chile Chicken Soup
(5-6 servings)
Ghee or oil to saute
1 small onion, chopped
3 medium sized red potatoes, chopped or whatever kind you have
2 garlic cloves minced
3 tomatoes, chopped
3/4-1 pound roasted, peeled hatch green chiles chopped
1 tablespoon homemade taco seasoning*
Salt
Pepper
4-5 cups stock
Shredded chicken
Serve with:
Cilantro- chopped
Lime juice
Chopped avocado
*If you don't have this taco seasoning made up use
1/2-3/4 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon marjoram
Instant Pot Method
- Hit the SAUTE button and set it to high.
- Add ghee or cooking oil to the pot, about 1 tablespoon.
- Add onion, garlic, potatoes. I add them as I chop them.
- Stir occasionally, cook until onions begin to look translucent.
- Add remaining ingredients.
- Cancel the SAUTE mode and set the Instant Pot to MANUAL, HIGH PRESSURE for 10 minutes. After the cooking time is over let this set for 5-10 minutes.
- Slowly release the remaining pressure.
- Season to taste.
- Serve with cilantro, lime wedges and chopped avocado.
Stove Top Method
- Add oil or ghee to a pot or dutch oven over medium high heat.
- Add onion, garlic, potatoes as you chop them to the pan.
- Cook until the onions are almost translucent.
- Add remaining ingredients and bring the pot to a boil.
- Turn the flame down to a simmer and simmer for 10 minutes.
- Season to taste.
Serve with cilantro, lime wedges, and chopped avocado.

Pressure Cooker Hatch Green Chile Sauce
It's Chile Season y'all! The girls and I went and picked up our annual stash of Hatch Green Chile this year. We have been so blessed to have a couple of local grocery stores that stock them.Two of which will roast them in big roasters like they do back in the 505. That's New Mexico. This year my oldest chose "hot", we ended up with 40 pounds. The girls helped me peel and deseed them all.

Gluten Free Chile Rellenos
This is one of my absolute favorite ways to eat green chile, I say that all the time. This gluten free version tastes just as good as the traditional recipe made with wheat flour. I actually like this version better because I feel that the rice flour gives a lighter more crisp coating.
We've been blessed to be in an area where Hatch Green Chile's have become available during the season, some markets will even roast them by the case for customers. Fall isn't just pumpkin season, fall is also Hatch Green Chile season and it's right up there with pumpkin to me! This sauce is versatile. I use to for eggs, enchiladas, dipping sauce, on steaks, shrimp tacos, on burgers, on chicken...
If you can't find Hatch Green Chile use Anaheim, Poblano, most any big green chile that is fresh. This sauce can be made grain free, check the notes section.

Green Chili Pepper Jack Enchiladas
I love GREEN CHILI, Hatch Green Chili... It's just not readily available around here. The good thing about these enchiladas is that you have options, you can use a canned sauce try to find Hatch Green Chili Enchilada sauce if you are going that route. You can also roast your own chili. This recipe makes enough for our family of five with leftovers for another meal. You can make two smaller pans and freeze one also. I've only ever frozen enchiladas with corn tortillas though.
The Pepper jack gives this a little bit of a kick, but my five year old eats it with no complaint that it's too spicy. Our most favorite Pepper jack is from Rumiano Cheese Company. No contest. Such a yummy cheese and fantastic company.
You can also use this Green Chile sauce to cook your chicken or pork in, then sub this sauce for the chopped Green Chiles also.

Green Chile Corn Chowder
I'm not sure I've ever made Corn Chowder before. This chowder was quite the gamble for me. It has both potatoes and corn kernels in it. I've tried to stay away from anything with corn kernels because the children don't really like just kernels, but they love corn on the cob. It's only recently that they have been eating potatoes (white/yellow) also. Unless it was fries/chips, mashed and drenched in gravy, or butter stewed they weren't too interested in potatoes. They love my Best Baked Potatoes now, and will eat oven roasted potatoes if they are seasoned well and crisp on the outside. I just never make a big deal about foods that don't have much nutritional value, and while white potatoes have some, they really are just starch. That, and I'm not a fan of potatoes either. Whoa... life story there. Sorry. Moving on. This chowder is just a little spicy, it's easy to make, even my children ate it! I can't say they loved it and asked for seconds, but potatoes and corn kernels you know? The bacon helped :P
I wish I had fresh Hatch Chiles here but I don't. Last year I found some locally. No such luck this year, and I'm not sure I want to order online yet. Who knows. I may cave. As per the notes below use your favorite chiles. I found Hatch Chiles canned.

Roasting Hatch Chiles at home and Chile Rellenos
I was born and raised in New Mexico, so Chile, Hatch Chile runs through my veins. I miss being able to get it anywhere, even McDonald's. I miss being asked "red" or "green" instead of sweet or unsweet. So my parents sent me some fresh chilies through the mail. I asked for green, they send green but after two days in a box they became red chilies. Oh well, still DELISH! My dad did say they were "Medium", no they were burn your mouth on fire hot. WHEW.
Let's roast some chilies shall we?
