GPAC Pumpkin Pie Shakes (GF/DF options too)

 It's pumpkin season! I love pumpkin. These Pumpkin Pie Shakes are the BEST. It's like drinking a piece of pumpkin pie. I first posted them in 2008, HERE. I've made pumpkin pie, just so I could make these shakes. I'm serious. If you have leftover pie- I don't even know what that is, but if you have leftover pie, you can cut it into small slices and freeze them. The shakes stay nice and cold when it's frozen.
You can make these shakes if you don't have pie, or if you prefer a gluten free/dairy free option. Both are easy peasy. You can use Coconut Dream ice cream, frozen yogurt- plain yogurt frozen in an ice cube tray works awesome, any kind of milk you like. If you want the texture of crust, almond meal sprinkled on top of the gluten free shakes is yummy.

Oven Roasted Pumpkin Puree
Slow Cooker Pumpkin Puree
Instant Pot Pumpkin Puree

GPAC Pumpkin Pie Shake

1 slice of pumpkin pie
1 scoop vanilla bean ice cream *see notes*
1/2 teaspoon pumpkin pie spice (I make my own, so yummy!)
1/2 teaspoon of vanilla
Splash of milk

Top with-
Whipped cream 
Nutmeg
Ginger snap cookie
Almond meal, chopped almonds, pumpkin seeds, candied pecans
Blend all the ingredients in a blender. Pour into a glass. Top with whipped cream and nutmeg. (If you have a ginger snap cookie, crumble it on top.)


 

GPAC Gluten Free Pumpkin Pie Shake

1/3 cup pumpkin puree or 3-4 frozen pumpkin cubes
1 scoop of vanilla bean ice cream
1/2 teaspoon pumpkin pie spice
1/2 teaspoon vanilla
Splash of milk
Optional- sweetener of choice, I think the ice cream is sweet enough

Top with-
Whipped cream
Nutmeg
Almond meal, chopped almonds, pumpkin seeds, candied pecans

Blend all the ingredients in a blender. Pour into a glass. Top with whipped cream, nutmeg, and/or almonds.

Notes-
  • 1 scoop of vanilla bean ice cream or frozen yogurt= about 5-6 cubes of frozen yogurt if you freeze them in cubes
  • If you have leftover pumpkin puree freeze it in an ice cube tray. Transfer them to a container or zip top bag for smoothies, shakes, or when you need small amounts of pumpkin.
  • Make these dairy free with Almond milk, Soy or Coconut milk. Use a dairy free ice cream also.
