Sausage, peppers and sweet potatoes

The hardest part of this meal is the sausage. Finding some without soy, gluten/bread crumbs, corn, or sugar. Your best bet is a butcher, specialty store or make your own. If you can't find sausages you want to eat you can use ground pork and add sausage spices- when I do this I add savory, fennel seed, garlic powder etc. You'll have crumbled sausage instead of links but still yummy.

Sausage Peppers Sweet Potatoes


Coconut oil
Sausages or ground pork
Sausage seasonings- fennel seeds, sage, summer savory, salt, pepper, garlic onion powders
2 sliced bell pepper
1 sliced onion
1 cubed sweet potato
Ground white pepper

Brown the sausage. If using ground pork brown the pork and drain the fat. Add sausage seasonings to the ground pork. Remove from heat. Use a pretty big sauce pan.

Add 2-3 teaspoons of coconut oil to the pan. Add the sweet potatoes to the pan, don't move them until they get a crust/sear on them. Flip the potatoes over and cook until half way done then add the onion and bell peppers- cook until crisp tender. Season with ground pepper. Return sausages/pork to the pan and heat through. You may need to add salt if you use ground pork. Premade sausages will be plenty salty once you cut into them.
