I love Roti. It's so yummy. I have never made real roti, I hear it's simple but I haven't had a chance. I do make wannabe Roti, my mom used to make this for us when we were younger. I hadn't had it in a while until we went to a Thai restaurant and the lady gave us some on the house because she knew my parents.
They can be filled with fruit also.
Wannabe Roti
Small flour tortillas2 eggs beaten
1/4 cup heavy cream, or milk
Unsalted butter
Sweetened condensed milk
Beat cream and eggs together. Heat a skillet with butter.
Dip the tortillas in the batter like you would French toast.
Coat both sides.
Pan fry on medium low heat until the eggs are set.
Keep them warm and finish the other tortillas.
drizzle with sweetened condensed milk, roll like crepes and sprinkle with powdered sugar. These are so yummy even if they sound a bit odd!
