Coconut Curry Spaghetti Squash

I made this dish one day when DH called and asked if we'd pick him up and take him to McDonald's before he had to get back to school. So I threw this together in literally less than ten minutes. I had leftovers, so of course it was fast. But even if you make this from scratch it's soo worth it. I promise. Just that afternoon I was posting on Facebook about how yummy Coconut butter was and that I was brainstorming more ways to use it. So the opportunity rose when DH called, talk about no time to think either! This sauce is much like the Sunbutter Satay sauce I have posted here.
This will serve 2-4 people depending on how much you are serving, if it's all you are serving or if it's a side dish. I didn't make that much but even the serving I made was so much!
Make your Spaghetti Squash in the crock pot, recipe HERE, if you haven't prepared it in advance or don't have leftovers.

Granola Bars (no bake)

Sweet Courtney, from Courtney Marie Jewelry sent me this recipe for Granola bars. Can I just say how it's awesome that I've met so many wonderful people through this blog? Thanks so much Courtney!
When she sent the recipe, I opened the email and scanned the ingredients.
Peanut butter, ok sub almond or Sunbutter for Diva. I ended up using unsalted, no sugar added Sunbutter, just ground up sunflower seeds.
Rolled oats. I know I don't have rolled oats. What's a girl to do? I'll find something.
Honey, we've been sick so all the honey has been used up. I have maple syrup. Awesome.
Rice Krispy cereal- boy do I have that. I have like 5 boxes of the gluten free brown rice stuff. I stocked up when I had an awesome coupon.
Marshmallows, yes, I just bought those so I could use up the cereal.
Wheatgerm- in the fridge! (I didn't use this in the end)
YAY! Let's make these! I called Piglet to help me. My kitchen is so small, I only let one helper in there at a time if I can help it. I did make quite a few changes from the original recipe which I'll post below.
This recipe can easily be made gluten free with gluten free cereal, oats, marshmallows, chocolate chips, etc. It's free of tree-nuts too!
It is sweet, so it's a great treat.

GPAC Satay Sauce- Peanut/nut free

This sauce ROCKS. It's so good. Perfect with chicken satay, lettuce wraps, as a dip for vegetables, and salads. Or try it over noodles. I use Sunbutter, you can use almond butter if you tolerate almonds.
Thai Kitchen makes a paleo/primal compliant curry paste.

Goodness, I can't keep up with these lunch posts in spite of being in a total lunch packing RUT! So there will probably be less and less lunches to post until I get out of my rut. What are you favorite lunches to pack? I need inspiration!

The holiday's are fast approaching aren't they? This whole year is just flying by. I want to slow some parts of it way down. But I guess that's not possible :)

The lunches above are packed in a Planetbox Shuttle (top two pictures), and the bottom two are just some bento boxes that I have, which I don't use often but I like them.

2013 Bento 258-292 Take It Tuesday

I will be trying to consolidate pictures into collages so that these posts won't be so crazy long with tons and tons of pictures. With three kids in school now that's 15 lunches a week. Fifteen pictures, the thing is it's not like I make Chraraben bento or pretty bentos, I just pack lunches, so the need for fifty million pictures is silly. But it's fun for me, so I think the way I can streamline things a bit is put each day's pictures in a mini collage. I can't promise it will get done, but the other alternative is don't come on the blog on Tuesday's because that's when I post lunches :)

2014 Lunches 33-51

Oh my, I'm so back logged on lunches and all posts in general. I just am. I was already behind after the New Year, then I was away on a family emergency for a week last month. It has been so hard for me to get back into the swing of things. I do find I get into these ruts, but I don't know. This rut seems to be longer than most. The whole Facebook changes debacle doesn't make it any better either. I do miss interacting with you all on Facebook, but with all the changes less and less people see posts on there. I am not very active on google + either. Where do you all find you interact most with bloggers and readers of your blog? Leave me a comment and let me know!
Also did you know that I have a giveaway up right now? Please check it out, enter, and share. I'd appreciate it! Thanks so much. Here's the link.

Chicken
Simple Cabbage Salad

2013 Bento 188-201 #TakeitTuesday

I'm so sorry these pictures are just shot. My camera, I think I mentioned it. Needs to be replaced or sent in. The sensor is so off. Manual or auto focus, it doesn't matter. Anyway. The first three lunches for this Take It Tuesday post here on Give Peas A Chance have all the same foods, except Pixie got cheese, and her sister's got turkey.
Quinoa- with lime, cumin, other spices, and cilantro.
Lime wedge
Cucumber
Turkey/Cheese
Mandarin oranges
Olives
Tzatziki sauce
York Pieces

The next three lunches are exactly the same.
I baked Blueberry Cobbler right into the Planetbox container.
Cheese and Turkey (I used the cheese that I had cut hearts out of in Pixie's lunch above)
Cucumber
Salt
Watermelon
(The heart in the middle of the lunches is a piece of cheese that I painted on with food markers)
