Pancake Cupcakes- Let's call them muffins.


It's back to school time! I'm rather sad. We've been having so much fun checking off our Summer Bucket List. I'm also excited to see what the year brings, what the girls will learn. I know they will have so much fun. To get ready for school I have begun filling our freezer full of things like-

Meatballs- 1
Black beans- a huge pot to freeze for fast meals

Pancake Cupcakes
Chicken on a Stick
Sausage, Potato, and Cheese Handheld pockets or pies (I'll post these soon)
Frozen Garlic Pasta
Mini Handheld Pork Pies
Muffins- like Pumpkin Cream Cheese
I will only do a few things at once so the girls aren't eating food that's been frozen forever.

These Pancake Cupcakes are SO easy to make. The batter comes together easily, and you can add so many things to them. I made chocolate chip, blueberry, and cinnamon sugar this time around. Once baked and cooled, freeze them for faster lunch packing or for breakfast.
By the way. My camera fell out of the back of my car. It's shot, the sensor is so messed up on it. I'm devastated. So pictures and touch and go.

Give Peas A Chance Pancake Cupcakes (let's call them muffins, it sounds healthier) 

Yields- about 24 
1  1/2  cup milk
4 teaspoons lime juice, lemon juice, or vinegar*
6 Tablespoons unsalted butter, melted
2 large egg
1/3 cup maple syrup
3 teaspoons vanilla extract
1 teaspoon almond extract
4 cup flour
4 teaspoons baking powder
1/2  t. salt
Blueberries

Preheat the oven to 350 degrees.
Stir vinegar/lemon/lime into the milk. Let it sit for a few minutes. Add the egg, butter, syrup, and vanilla to the milk and whisk.
Stir in dry ingredients.
Mix until combined.
Pour the batter into a cupcake pan, I like to use liners.
Top with blueberries, you can push a few into the batter also.
Bake 13-15 minutes.
  • If you have buttermilk, use it in place of the milk and citrus juice/vinegar.
  • Lemon or lime juice is great for Lemon Poppy Seed pancakes, add extra lemon juice, and Poppy seeds. Top with blueberries.
  • Almond extract is great with blueberries, cherries, almonds... use your favorite.
  • Fill or top these with your favorite items, a little Nutella in the middle, chocolate chips, poppy seeds, cherries, BACON, sausage, macadamia nuts and coconut, whatever you like!
  • Berries don't need to be thawed if they are frozen.
  • Mini pancake cupcakes bake in less time :)
