This pasta dish is creamy and flavorful. The ingredients are simple and easy to find many times I already have them on hand. It's not a difficult dish to make but it is so good. perfect quick weeknight meal.

Mythos Restaurant- Universal Studios Orlando
Mythos was the best meal we had at Universal Studios. The pork chop was so amazing. Cooked sous vide then seared. So tender and juicy. The aioli on my daughter's already delicious lamb burger was so good. My youngest ordered the grilled cheese and finished it. The cheeses were so gooey and yummy. She isn't a big eater so we were surprised.
The restaurant itself is so beautiful. It's bright and so pretty inside. The service was great, the chef and server were very attentive and assured us that our food would be allergy friendly for my but nut free child.
I would absolutely eat here again.

Greek Inspired Chickpea Salad
This Greek Inspired Chickpea Salad can be served as a side dish, over salad, or as a main dish with some pita bread. It's so easy to make kids who are good with a knife can prepare it on their own. If I use Feta cheese I usually add that a little before serving. I just prefer it that way.

Our quiche recipe is so simple. It may not be gourmet, but it works so well for us. My 8 year old made these two with leftovers. I had leftover steamed broccoli and leftover Creamed Spinach in the fridge. I did crimp the pie crust- we used refrigerated pie crusts. I also put them in the oven and took them out.
Quiche freezes well, so I'll be cutting into smaller portions and put them in the freezer. They will be perfect for a quick lunch with a salad. The soup posted above is our version of Zuppa Tuscona.

Lao Style Egg Rolls

Egg Rolls are a childhood favorite of mine. My children enjoy them also. We eat them "plain" or in lettuce wraps. |
I originally posted this Egg Roll "method" here. It's not really a recipe because I tend to make my Egg Rolls with whatever is on hand. This time around I threw in 1/3 cup of black fungus, that was soaked in water and rinsed well. I do prefer pork in my egg rolls, but I don't mind doing half pork and turkey or chicken. I feel beef is a little over powering.

Vermicelli Noodle Bowl
An oldie but goodie. Not the picture, but Vermicelli Noodle Bowls. I put either these or Spring Rolls on our menu at least once every two weeks. They are just so easy and everyone here enjoys it! Win win here at the Give Peas A Chance household!

Thai Basil Stir Fry

Give Peas A Chance - Matzo Ball Soup
Happy Manic Monday!!! One of my favorite soups is Matzo Ball soup. My sweet friend, who's birthday is coming up shortly taught this way not Jewish girl how to make this. Every time I make this it reminds me of my bestie. I love how food is not just nourishment, it's also memories, relationships built, relationships nurtured. I understand the eat to live, live to eat thing. I do. But I also understand that food is so much more than that, and can be so much more than that in a healthy way.

Green Chili Pepper Jack Enchiladas
I love GREEN CHILI, Hatch Green Chili... It's just not readily available around here. The good thing about these enchiladas is that you have options, you can use a canned sauce try to find Hatch Green Chili Enchilada sauce if you are going that route. You can also roast your own chili. This recipe makes enough for our family of five with leftovers for another meal. You can make two smaller pans and freeze one also. I've only ever frozen enchiladas with corn tortillas though.
The Pepper jack gives this a little bit of a kick, but my five year old eats it with no complaint that it's too spicy. Our most favorite Pepper jack is from Rumiano Cheese Company. No contest. Such a yummy cheese and fantastic company.
You can also use this Green Chile sauce to cook your chicken or pork in, then sub this sauce for the chopped Green Chiles also.

Roll Your Own Sushi Bar
YUM. We're big fans of sushi, the kids and I. Sometimes it takes too long for me to roll so many rolls. Roll your own/assemble your own sushi to the rescue. Yes, we could just throw it in a bow and Chirashi it, but this is fun also!
All you need are ingredients you like, we had-
Short grain rice. I mixed it with rice wine vinegar, water, and palm sugar. Sometimes I add soy sauce.
Sushi grade fish (We had salmon, I made a spicy salmon with it. Roe, salmon, sriracha, mayo. I didn't have green onion)
Crab stick
Cucumber
Avocado
Roe
Roe
Soy Wraps
Nori
Wasabi
Soy Sauce
Other ingredients, even non conventional ones as long as you like them!
Steak
Asparagus (pickled, fresh, blanched)
Pickled ginger

French Onion Soup
Whew!!! It's (finally) just another Manic Monday here on Give Peas a Chance. It's been a while, a month. So what's Manic Monday? It's when I share, re-share, and or revamp some of our family favorites here on GPAC. This week it's French Onion Soup. I still make this pretty much the same, I just don't really use measurements or measuring cups and spoons when cooking. This soup can easily be made gluten-free by leaving out the flour, switching to gluten free soy sauce (or using Braggs or Coconut Amnios), and just reading what's in your other ingredients. You could try to make this dairy free. I've not tried non dairy cheeses though.

Happy Thanksgiving...
I hope you all had a wonderful Thanksgiving and were able to spend it the way you wanted. We had a quiet time at home and t was such a blessing. DH was home, we didn't go anywhere, rush anywhere. On Friday we went with DH to his school for about an hour, actually we went to a store while he did some things in the lab. I got a shower curtain liner, I know big spender right? I can't remember the last time where we just didn't feel rushed or feel like there was somewhere we needed to be or DH needed to be. It was a wonderful long weekend. I hope that your time was blessed.

Black Bean Tostadas

Thai Beef Salad
One of my family's and my very favorite salads is Thai Beef Salad. How can you go wrong? Juicy steak, vegetables, spicy vinaigrette. It's so good. I don't make it too spicy for the kids. It's great because this is one of those meals I can make for dinner and I know that everyone will love it. I use other vegetables like carrots, bell peppers, and such. Just depends on what I have available.

Simple Salmon Salad
Isn't it funny how kids will surprise you with what they will and won't eat? Like up until a few months ago my girls would eat raw salmon, but not cooked. Now they all will eat cooked salmon, Pixie doesn't eat it raw. I admittedly am not a huge fan of cooked salmon, I'd much rather have it raw. Pixie also only eats "clean" mushrooms, not "dirty". Meaning she will eat raw mushrooms, but not cooked ones. Weird kids here at Give Peas A Chance. I didn't think the kids would like this simple salad at all. I don't know. For one I haven't bought canned salmon in years. Because no one eats it. I remember as a child my mom would take a can of sardines in tomato sauce. She added cilantro, onions, and I don't even know what else. It was so good though. SO thought, everything is better with fresh cilantro, let's try it.
The kids loved it. Not kidding. I made one can for myself and they each had a bite. I ended up using three cans total during lunch. So odd. I really enjoyed it also. Spicy, tart, fresh cilantro. YUM. We just had it over lettuce. I wonder if I made this for them to take to school if they would eat it? Or if this was a fluke?
PS Pixie can't handle the jalapenos so I leave them off of her salad.

Give Peas A Chance Salmon Salad
2 cans Wild Alaskan Salmon, drained well (6 ounces each)
Zest from one lime
Juice from one lime
Kosher salt
Fresh cracked pepper
1-2 jalapenos, chopped (seeded if you don't want it too spicy)
1/3 cup chopped cilantro
1/3 cup chopped cilantro
Mix- lime zest, half the lime juice, 1/2 teaspoon kosher salt, and black pepper.
Toss the salmon gently with the lime dressing and jalapenos.
Taste salmon and adjust seasonings, salt, pepper, and lime juice.
Gently fold in cilantro.

Serve with crackers, on top of lettuce, in tomatoes, or just eat it!
-Check your Kosher salt, Diamond Crystal Kosher salt is the only one I've seen without additives. I was so frustrated when I glanced down at my blue box one day and saw that there wasn't just "salt" in there. Sigh.

Tilapia With Cilantro Ginger Sauce
This may be the best way to have Tilapia fillets. Granted I'm not fish expert. I assess things by how my family eats and Pixie will eat 2/3 of a fillet - which is three servings for her. She isn't a big eater, so this is pretty much crazy, have to stop her stuff. Piglet and Diva have seconds usually also. Certainly a go to dish for me to make, it doesn't take long either.
I put together this Cilantro Ginger Sauce because every time we go to a certain Chinese restaurant (China Express, you can read the review through that link) in Chinatown here we puffy heart the ginger sauce. So I decided to make something like it. It's not the same because theirs has no lime and it's got a lot of vegetable oil in it. It's so good though. We stir it into stir fry, dip dumplings into it, stir it in to bowls of hand stretched noodles. YUM.

Slow Cooker Pot Roast
I don't make Pot Roast the way I used to. I should, because it's good. But I haven't bought French Onion soup mix in... years. We don't eat post roast often so I think using the soup mix wouldn't be a huge deal. I do love the taste of beef though, so I don't like to mask it too much with overpowering flavors.
When I make my roasts now I toss everything in the crock pot. Rarely do I brown the meat. This is mainly because I put my roasts in the crock pot while frozen. That's just me. It's one of the few dishes I can make in the crock pot, but sometimes it's still touch and go. Crock pot's hate me.

Better Than Bouillon Organic - just the paste (no water)
Worcestershire sauce
Soy Sauce
Minced Garlic

Thyme
Throw it all in the crockpot. Turn it on low all day. 8 ish hours.
