Crunchy Pork Belly

I find this method the easiest way to get crunchy pork belly. You can season the pork however you like. I've done Five spice,  char sui style. I only season the underside before putting the pork under the broiler. The skin doesn't need seasoning and it'll burn off under the broiler in the oven anyway.

Butter Chicken (Butter Shrimp)


This is a quick and easy version of Butter Chicken that doesn't skimp on flavor. It's great for those busy weeknights. I marinate the chicken the night before. I've also prepared the shallots, garlic, and ginger in a small container. Pour a tiny bit of olive oil cover it and keep it in the refrigerator until you're ready for it. My kids have prepped this for me. It's so easy.
We like this served over rice or with Naan bread or Pita bread. Any of those are perfect for soaking up the sauce in this dish.

 You can also make this with shrimp. The only thing with shrimp is you need to make the sauce first in the pressure cooker, I use an Instant Pot. Then stir the marinated shrimp into the cooked sauce, and let it simmer on saute mode until the shrimp is cooked.

Green Chile Chicken Soup

Whole30 Green Chile Chicken Soup
This soup is just something that you can do with leftover chicken. I use the bones to make a stock and build the flavors from there. You can find my stock method here.  I have green chile roasted in my freezer. If you can not find Hatch Green Chile, you can substitute roasted, peeled Poblano peppers or Anaheim peppers. They won't be the same but they will be good. I actually ran out of what is pictured below and had to order some online.


Once you have those ingredients on hand it's really easy. There's only a ten minute cooking time in the Instant Pot, plus about 5 minutes resting time. You can get this on the table in under 30 minutes even if you use a pot on the stove though.

This isn't an authentic Green Chile Stew, it's a quick complaint Whole30 soup that is flavorful and delicious though. It's perfect to have for leftovers also.

Green Chile Chicken Soup

(5-6 servings)
Ghee or oil to saute
1 small onion, chopped
3 medium sized red potatoes, chopped or whatever kind you have
2 garlic cloves minced
3 tomatoes, chopped
3/4-1 pound roasted, peeled hatch green chiles chopped
Salt
Pepper
4-5 cups stock
Shredded chicken

Serve with:
Cilantro- chopped
Lime juice
Chopped avocado

*If you don't have this taco seasoning made up use
1/2-3/4 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon marjoram


Instant Pot Method

  1. Hit the SAUTE button and set it to high.
  2. Add ghee or cooking oil to the pot, about 1 tablespoon.
  3. Add onion, garlic, potatoes. I add them as I chop them.
  4. Stir occasionally, cook until onions begin to look translucent.
  5. Add remaining ingredients.
  6. Cancel the SAUTE mode and set the Instant Pot to MANUAL, HIGH PRESSURE for 10 minutes. After the cooking time is over let this set for 5-10 minutes. 
  7. Slowly release the remaining pressure.
  8. Season to taste.
  9. Serve with cilantro, lime wedges and chopped avocado.


Stove Top Method

  1. Add oil or ghee to a pot or dutch oven over medium high heat.
  2. Add onion, garlic, potatoes as you chop them to the pan.
  3. Cook until the onions are almost translucent.
  4. Add remaining ingredients and bring the pot to a boil.
  5. Turn the flame down to a simmer and simmer for 10 minutes.
  6. Season to taste.
Serve with cilantro, lime wedges, and chopped avocado.

Spaghetti Squash and Meatballs


Here is a quick Whole30 Spaghetti Squash and Meatballs for you. I find the easiest way to cook the spaghetti squash is in the Instant Pot. It can be cooked ahead of time and heated in the oven while the meatballs cook in the sauce. I prep the meatballs ahead of time also, they can be kept in the refrigerator for a few days or put in the freezer. I have not baked the meatballs from frozen, but I don't see why it wouldn't work. You would have to adjust the time and add a little water to the sauce so it doesn't burn or dry out.
This was a big hit with my family. Everyone loved the meatballs. They aren't as tender as meatballs that have a bread crumb in them to me, but no one in my family said a word about it. My youngest isn't the biggest fan of spaghetti squash though. The meatballs would work with zucchini noodles also.

Masala Chai


I have for you a Whole 30 Masala Chai. Because it's a cold rainy day, and cold rainy day's call for a lovely cup of tea. Okay, any day in my book. But here we are. This original recipe can be found HERE. If you are eating paleo, add a little sweetener.

This recipe is easily scaled down to make one cup. It's about 1/4 cup water and the rest milks. I use one tea bag. Put everything in and cook in the Instant Pot for 5 minutes.

Seafood Stock

Instant Pot seafood stock.
Here's a an easy seafood stock to make whenever the stock bags in your freezer get full. You have stock bags right? Labeled seafood, beef, chicken, veggie... pork? If not start some. Put vegetable scraps, stems of cilantro and parsley in them. Chicken bones, beef bones. Once full, pull them out and make a stock.
Things I don't put in there
organ meats
broccoli
cauliflower
potatoes
onion skins
asparagus
peppers
cabbage
There's probably more, but I can't think of any right now.

Instant Pot Collard Greens


It's a shame that not more people in this house like Collard Greens. Just my oldest and I really like them, my middle and youngest will eat a serving, it it's not too spicy. Other than that DH doesn't really like them. Too bad, they are good for you. I usually make up a big batch and keep a few servings in the freezer at a time. When I get the craving, want some for dinner or over cornbread I pull it out. I have used different methods to make this, they all work fine and each one is a little different. My kids really the the creole seasoning so this one is a favorite.
What about your household? What are foods you love, but don't always make often?

This is the same recipe that is posted here, I just adapted it for cooking in my Instant Pot. I'm using the same picture because I forgot to take a picture before dinner. The picture below, is what's leftover from last night. Oops. It's leftovers from dinner and leftovers from after packing my kids lunches. Just not as pretty a picture is it, no carrots, etc? I will say though that it tastes even better today! No complaints here on flavor.

Instant Pot Spaghetti Squash

Instant Pot Spaghetti Squash
Spaghetti squash season is practically over! I hope to enjoy them more before they are all gone until the next season. One of the easiest ways to cook these is in the Instant Pot.

Spaghetti Squash (Instant Pot Method)

  1. Wash the outside of the squash.
  2. Cut each squash in half.
  3. Scoop out the seeds.
  4. Put 1 cup of water into the Instant Pot.
  5. Put the trivet or a steamer basket into the liner.
  6. Place each squash half into the Instant Pot liner.
  7. Cook on MANUAL, HIGH/MORE, for 4-6 minutes.  
  8. Once the cook time is over, do a quick release and test each squash to make sure it is tender.
  9. Add more cook time if needed.
You can also cook these whole in the Instant Pot. You'll have to cook them for about 10 minutes though.

Fantastic Five Grain Porridge

I'm on a porridge, congee, steel cut oats kick. I think it's the cool weather. Someone mentioned Pret a Manger the other day and how they had the best porridge. So I looked it up on their site and they have a five grain porridge, the site lists the grains, but not the recipe, though they have recipes for other things on there. The grains are what I had on hand so I set off to find a recipe or at least some clue on what to do. My search lead me to Bon Appetite. They have a recipe for this 5-Grain Porridge Bee Pollen with Apples and Coconuts on their web page. It has brown rice, quinoa, millet, wheat bran, and amaranth. Well I didn't want rice. I love steel cut oats. I didn't have millet. I don't really like bee pollen, I used to take it as a kid for allergies, so it's just not my thing now. I still wanted to pull grains from my pantry and see if I could make a mix of my own up. So you should use any grains you have also, just like the Bon Appetite recipe says, "Use what you have". Just pay attention to cooking times and water ratio.

One Minute Quinoa (Pressure Cooker)


Looking to make Quinoa in your pressure cooker? This method has worked so well for me, I won't make it any other way now. I used to make my Quinoa in the rice cooker which also came out perfect, but my rice cooker has a non stick coating on the insert so I am not using it as much.
This method is simple and easy. As long as you keep the water to liquid ratio you can change out the liquid to suit your needs. Stock, water, broth, juice, tea. This does require soaking the Quinoa, but it's for only 5-10 minutes. I put the Quinoa in water then gather remaining ingredients. There's really no wait. Season it up and serve it how you like! Try my Southwest Quinoa Pilaf, or serve it with these Easy Peasy Curry Chickpeas, I'll be adapting this to Instant Pot cooking also, but believe me it's so easy.

Tacos and Taco Salads

Sooo. Christmas has come and gone, leftovers are eaten up. How about something simple and easy? Tacos? Taco Salad? How about in the Instant Pot? Taco meat? In the Instant Pot? Yes. I was skeptical but this works. I know that taco meat is so easy to do on the stove. My kids have been doing it since eight years of age. But, why not try something new. I have not let me children use the Instant Pot yet.
This method for making taco meat isn't necessarily a time saver. But it takes less hands on time. While the pressure cooker is doing it's thing vegetables can be prepped, the internet can be surfed. Christmas decorations can be put away. So there's that.

Chili Dogs (With The BEST Boiled Hot Dogs)

I'm sitting here typing this up and I just watched the Chicago Cubs win the World Series. I don't watch baseball usually. Unless it's live. But either way this would have went it would have been historical. So we watched and it was stressful at times! What a game! Appropriate that this post is about hot dogs, a great ball park food.
I made about 40 of these for a Halloween party, they are a huge hit. My kids hardly ever eat hot dogs and they loved them. I knew that for a crowd I wanted to put them in the slow cooker like I did for DD's Big Hero Six party. As I was putting them in the slow cooker (my Instant Pot was busy with the chili) I thought, I should flavor this water. I choose whole spices like garlic, bay, and celery seeds. It was PERFECT. Usually hot dogs can be salty for us, so I didn't add any salt. I didn't use stock or anything like that. Even my DH, who doesn't really eat hot dogs said they were good. My kids requested them for lunch the next day. I kept the chili hot in a thermos, and cut hot dogs up in there. I sent buns and toppings separate.

Glazed Carrots

The one's I'm posting today are Green Goddess Glazed. You can use a Green Goddess seasoning, like Penzey's which we really enjoy. OR if you have them, use the herbs and spices from this post HERE.

Lao Steamed Egg with Minced Pork

Lao Steamed Egg Instant Pot method.

 This is another one of those dishes that I grew up with that I love to eat but just never blogged. I don't have a ton of Lao recipes on this blog because... well because they are dishes that I just make. I never sat down to take measurements of them. I didn't grow up with measurements while cooking them, Neither did my mom. I realize that these may be the recipes the kids want someday. So I'm trying to get through them and post some as much as I can. This dish makes me think of my childhood. I hope you'll try it.
This was steamed in a 8 inch pan.
My mom would make this in a steamer on the stove. I have included instructions for stove top steaming and pressure cooking. I use an Instant Pot. I am sure you can use another pressure cooker though.

Freezer Tip: Stock Bag, Schmaltz Bag

Hello! Quick Freezer Tip post today on two things. Stock bags and Schmaltz. I make several types of stock: seafood, beef, chicken, pork, vegetables. Often times I'll combine a couple or more. There's always vegetables in the beef, chicken, or pork. Often times I'll make beef stock and add pork. I don't mind adding chicken bones to a beef stock. But because chicken has a more delicate flavor I don't use beef or pork bones in that stock. For seafood I don't add any other bones or meats. 
So what's a stock bag, and what do I put in them? A stock bag is a I keep in the freezer, labeled with whatever the end result should be. The bag above is obvious as those are all chicken bones, but normally I would label the bag "chicken stock". Any bones from chickens, I throw in there. If I roast a chicken I'll break down the carcass and toss the bones in the bag. Kidneys and hearts we actually eat, but if we didn't they would go into the stock bag. Liver I wouldn't put in stock because it gets cloudy and tends to give off a metallic flavor I don't like.

Quick School Lunch Chicken Noodle Soup

Some days I wake up with no plan for lunches. Of course the kids could just buy lunches but they don't like it and by the time they get through the lunch line there's about 15 minutes max to eat lunch.  I have no issues packing them lunches, I truly enjoy doing it. I know many people groan about it and just don't like to do it. I am not one of those people the majority of the time. 
Any aromatics can be used. I used these for an udon noodle soup.
There are some days I will groan but not often. I also like to know that they are eating foods they like. There are some days that they do want to buy lunch if it's something they are in the mood for, and that's fine also. My two younger kids will do that, my oldest won't. She didn't buy a single school lunch last year.

Instant Pot Jasmine Rice

Each grain stands on it's own, no mushy rice here!
Jasmine rice, basmati, most long or short grain white rice I cook with the same method. In a rice cooker I wash and drain. Add about one inch of water and press the start button. I measure with my finger, have since my mom taught me as a child.  I don't usually pull out my ruler, but I thought it would help for this post. For brown rice, I add a splash more of water. That's helpful isn't it?

Twice Baked Potatoes


Twice Baked Potatoes. I tell you, they are so simple aren't they? There's no real recipe, it's just a method and you put whatever you want in them I say. Buffalo Chicken? Make your potatoes with blue cheese and them top with shredded chicken in buffalo sauce. Have a favorite mashed potato recipe you want to use? Use it! Bacon? Add it! Sliced jalapenos? Be still my beating heart. Whatever pretty much can work here. I mean within reason. Nothing too wet and soupy right? The filling has to stay in the potato.
