Spicy Sausage Seasoning

Gluten Free Spicy Sausage Patties
Gearing up for another attempt at Whole30 maybe Paleo for this May. Eek. So that means some meal prep. You may think I am constantly eating three square meals a day, but really I sometimes forget about lunch and breakfast during the week. I don't get around it eating sometimes, and I know that's horrible for me. I usually get tired, or end up eating a billion calories late at night. This time around I am going to try to prep some (more) meals ahead of time and see if it helps me be more successful.

Greek Chicken Kabobs With Greek Seasoning Blend

These were a hit with the whole family. I thought I had made too much but there wasn't any leftover! The Greek Seasoning blend is easy to make, I had everything on hand. If you don't have fried lemon zest/peel, just omit and when you're marinating add fresh lemon zest. 
Serve this with some Tzatziki sauce if you like, and pita bread.

Give Peas A Chance Curry Meatball Stew

Curry Meatballs and Mashed Cauliflower

 These meatballs are so simple. They freeze so well also. I made them one night on a fluke really. I was going to make meatloaf and I didn't have any tomatoes to make tomato sauce, and I didn't have canned tomatoes. So I decided to make meatballs instead. Because these are Whole30 meatballs, they don't have any grain- you can always add breadcrumbs to them if you would like. This is not spicy, I love spicy hot food but the girls don't eat that spicy.
I served them with Basil Mashed Cauliflower and steamed broccoli. They would be excellent over rice though.

Firecracker Meatloaf

A little something from the Love Abounds pantry. This meatloaf is made with my Firecracker Sweet n' Spicy Rub found here. YUMMY. 
 It's got a little heat and the yummy topping makes a crust that is slightly caramelized from the sugar in the rub. You can also use Original Sweet N' Spicy Rub.

Roasted Boneless Leg of Lamb

I love lamb. Traditionally we have Prime Rib and King crab legs for Christmas dinner, but this year we had Roasted Lamb and King crab legs. I cooked it to 140 degrees THEN let it rest and continue to cook on the counter. Perfect. Piglet's favorite part of the meal, even more so than the cake. So tender and juicy.

Roasted Lamb Shank (half)

***I apologize now to any vegetarians reading this post. You might want to look away.***



It's a thing of beauty is it not? The girls inhaled dinner tonight, Piglet had THREE servings of lamb, and only two of broccoli, very unlike her. Broccoli is her favorite. We had this with steamed broccoli and mint jelly. Pineapple upside-down cake for dessert. I don't make a lot of lamb, I love it. It's just one of those things that DH eats but doesn't love. And if he eats it, he likes it well done. Which yes, I know I should be having it well done or at least medium well and so should the girls. But here we are. No real recipe, more of a method here I guess.

1/2 lamb shank- 2.5 pounds is the one I had in the freezer
Sea salt
Poultry seasoning
Herbs De Provence



Mix up those spices. Heat oven to 375 degrees. I apologize for the dark coated pan I am using, I was too lazy to pull out a roaster, it's too big, I need one... hmmm honey, if you see this I need a small stainless steel roaster.



Score the fat of the lamb, rub in the spices. Insert your meat thermometer, if it's working, mine died... hmmm honey if you're reading this I need another meat thermometer. I love you.
Roast at 375 for 15 minutes, on a rack if you have one that fits in the pan. After 15 minutes turn the oven to 325.





This little one took exactly an hour. Give or take a few minutes. I had to test it by pushing on it. Since I have no working thermometer... OK I know let it go.







Gorgeous isn't it? Lamb IMO should be eaten medium rare to rare. Unless it's in a stew or something like that.

Lamb chops

I love lamb, so yummy. DH? Not so much so I generally make it when he's deployed or flying. So tonight I made some lamb, the girls had a little and chicken noodle soup that I had simmering because Diva was feeling sick. I wouldn't say this is a recipe... more a method I guess.

Lamb chops
Olive oil
Preheat oven to 325
Sea salt



Garlic powder
Rosemary- how sad is this i was too lazy to walk outside to get some off the bush so I used dried
Fresh cracked pepper
I put my spices and seasonings on a plate so that after I am done searing the lamb I can set it down on the seasonings and then only have to season one side.


Sear the lamb in a oven safe pan with a little oil. Make sure it is HOT and once the meat is in the pan don't move it. You want it to sear and form a nice crust.





I seared the one side of the chops because there was fat there and I wanted it to be crispy. (Vegetarians look away, sorry)
I only seared one side of my chops because after I seasoned them I put them non seared side down on a hot pan and they get seared that way. I happen to like my lamb rare so the less contact with heat the better.



Place lamb on seasoning and rub in, season both sides.









Return to pan, insert meat thermometer and place in oven. It took 12 minutes for my chops to be done rare.
Let them rest and enjoy.
