Chicken Chicharrón


I'm not sure Crispy Chicken Chips, Chicken Chicharrón is a thing, but this is good and it now is a thing right here, right now. Like bacon good to me. Maybe better because it's so crispy. They are like Chicharron/Chicharrón but different animal. It's wrong, you say? Then I don't want to be right.

GPAC- Bacon Kettle Corn

I honestly didn't think you could do much to Kettle Corn. I mean it's so simple. Sweet, salty, crunchy goodness. Well folks I was so wrong. I'm fine with admitting I was wrong, really. Now I puffy heart bacon, pork belly,  pork fat in general. I like using home rendered lard for cooking, eating the Chicharrón, making Khai Pa Lo. Bacon and I are tight. Because if loving bacon is wrong, I don't want to be right. I'm talking Bacon Crack-ers tight. So why didn't ever do this before is beyond me. This recipe came about one night when I was cooking ahead for the weekend, and I needed bacon grease because my mason jar in the refrigerator was running low. It was a Friday night, I remember because it was movie night and I was making  Kettle Corn for the movie. I put some bacon in the oven for the next day. The beautiful aroma filled the air- for reals. It was like this throughout my house-

Whole30 Thursday Week Two

A whole week has passed, and I haven't passed out from wanting quick absorbed sugars. :) I remember when I did Paleo a couple of years ago. Goodness I was dipping into the coconut butter quite a bit, I haven't opened the jar this time! Think I'll make it the whole month? I'm praying so!

Breakfast- Scrambled eggs and sliced jalapenos (Scrambled in ghee)
Lunch- Steak, spinach, and mushrooms. That's a huge steak. Pixie and I shared lunch.
Dinner- EVERYONE loved dinner. I'm finding that my family just loves our regular dinners, and this is something we've had often, it's already Whole30 compliant so that's awesome for me. Come to think of it, breakfast and lunch are "usual's" and they are also complaint. It's my snacking that's an issue and weeding out other meals, like Chicken Pot Pie. Anyway- Chicken marinated with a cilantro lime marinade that's so quick and easy. Salad on the side, with spicy mango salsa. 
Snacks- Mandarin oranges, red bell peppers, and cashews.
(also some leftover mango salsa and chicken)

Chicharrón (In the oven)


I admit I was skeptical about making these in the oven but honestly, so easy! Here is how you make them on the stove LINK. Just like bacon in the oven, these are pretty fuss free, LINK
Some people will trim the meat from the pork belly and some of the fat, then boil in salted water for 30 minutes. I've never done that, but it's worth a shot to boil some of the fat off and salt in the process.
*you can save the fat renderings, strain them and keep them in the fridge- LARD!

Chicharrón


Pork. Fat. Rules.
That's all I have to say. Homemade still hot chicharrones with a sprinkling of kosher salt. SO good. Good dipped in a Louisiana hot sauce also. I have seen these done in a low oven over long periods of time. But my mom just threw the cut up pork belly in a big pot and let it cook in it's own fat renderings until crisp. So that's what I do.
Cut it up the pork belly and put it in a pot over medium high heat. Cook until the pork belly is crisp. Remove from pot and drain the fat. Place on a rack over a cookie sheet to drain, salt liberally while still hot.
*you can save the fat renderings, strain them and keep them in the fridge- LARD!
