Quick Caprese Pasta


I love quick and easy meals. This is so simple but we all love it. What's not to love? Pasta, fresh tomatoes, fragrant basil, soft mozzarella. The perfect quick meat free weeknight meal. Easy enough for the kids to make also!
What are some of your favorite weeknight meals? I'm always looking for ideas, especially now that school has started and soccer season also! I also love finding meatless meals that we all enjoy. Caprese salad tossed with pasta and a garlicky sauce, pretty perfect.

Grab a big bowl for this and have the kids toss it all together!

This is a great dish to have your children make, preteens and teens can do most of this on their own!
The garlic and herbs in the oil smell amazing. This is before heating.





Give Peas A Chance Caprese Pasta


16 ounces thin spaghetti
1/2-1 cup pasta water from cooking spaghetti
1/4- 1/3 cup olive oil
2 cloves garlic, peeled and minced
1 teaspoon red pepper flakes
1/2 teaspoon Italian seasoning
2 tomatoes, cubed
4-6 ounces fresh mozzarella cheese, cubed
1 cup basil leaves lightly packed
Salt
Pepper

  1. Bring a pot of water to boil, add salt and cook pasta according to directions on the box until al dente. Drain pasta, reserving 1-1/2 cups of cooking liquid.
  2. In a small pot heat olive oil. 
  3. Add garlic and red pepper flakes to the small pot. Remove from heat once fragrant. Do not brown the garlic.
  4. Add Italian seasoning to the pot.
  5. Put cooked pasta in a big bowl along with tomatoes,toss with the oil mixture.
  6. Add 1/2 cup of pasta mixture to the bowl, toss adding more water as needed.
  7. Add mozzarella cheese.
  8. Chiffonade the basil leaves, and gently fold into the pasta.
  9. Season with salt and pepper.
