Fresh Cranberry Relish


MMM. This is a nice change from Cranberry Sauce or Cranberry Compote. It's a refreshing uncooked relish, great made a day or two ahead too. I like it just as a salad by itself, on a sandwich, with turkey, stirred in yogurt even. Play with different combinations of flavors. I liked the warmth that ginger puts in this, my mom had a sore throat and loved the ginger in it. I hope you'll try this it's really good!

Give Peas A Chance Fresh Cranberry Relish

1 bag cranberries
1-2 apples, I like Fuji and Granny Smith - one tart and one sweet
zest from 2 oranges
one orange
15 ounce can crushed pineapple, drained well
1 1/2 teaspoons fresh grated ginger, or use minced candied ginger
1/4-1/3 cup brown sugar (See note below.)
pinch of salt
1/2 cup chopped pecans- optional

In a food processor, pulse the cranberries until they are finely chopped.
Put them into a bowl.
Finely chop the apple/s, and orange in the food processor. Add them to the bowl.
Stir in remaining ingredients, except the pecans.
Cover and refrigerate for at least an hour before serving.
Stir in pecans before serving.

Optional additions/substitutions-
Pinch of ground cloves
Ground cinnamon
Omit the pineapple and add 1/2 a cup of pomegranate seeds
If desired the whole orange (instead of just juice and zest), including pith/peel, can be finely chopped in the food processor and stirred into the relish.
Use persimmons, or pears in place of apples.
Don't want to use sugar? Try a handful of pitted dates instead, or honey!
