Shredded Pork Tacos

These pork tacos are easy and YUUMMMMY. I like them more than beef tacos. They are pretty simple to make so that's a plus. This recipe is adapted from a MSL Everyday Food recipe.

Shredded Pork Tacos

3 tablespoons olive oil, plus more for pan
1/2 onion, cut into chunks
3 cloves of garlic
1/2 teaspoon dried oregano
2-3 large chipotle chiles in adobo sauce
2 teaspoons Homemade Taco Seasoning
1-2 pounds boneless pork shoulder cubed
Coarse salt and black pepper
1/2 cup chicken stock
1 cinnamon stick
1 bay leaf



Plug a crock pot in and let it heat up while you prepare the pork.
Season the pork with salt and pepper.





For the sauce put the garlic cloves into a small bowl and heat in the microwave for 45-60 seconds until they burst out of their skin and are soft, squeeze them out of the skin. Place the first 6 ingredients in a blender. Blended into a sauce/paste add more olive oil if needed. heat a little olive oil in a sauce pan. Add the paste and let it cook until fragrant about 5-6 minutes. Add the chicken stock and cook until thick.



Place the seasoned pork, cinnamon stick and bay leaf into the crock pot. Cover with sauce. Cook on high for four hours.






Shred the pork with two forks and serve in warm tortillas with fresh cilantro, limes, olives, cheese, salsa, sour cream, and avocado wedges.
