Roasted King Oyster Mushrooms & Brussels Sprouts

There's something wonderful about simple dishes that don't need a lot. This Roasted King Oyster Mushroom dish is so simple. Very easy to make, the King Oysters are a meaty mushroom, along with the caramelized sprouts and onions, this is a filling dish. It's a perfect side dish but also filling for a light lunch.

King Oyster mushrooms are pretty big. I love the flavor. They are great in soups also. I find them at the Asian market here.

Roasted King Oyster Mushrooms, Brussels Sprouts, and Onions

King Oyster Mushrooms- washed and sliced
Brussels sprouts- washed/ trimmed and halved
1/2 sweet onion sliced
Olive oil (Or butter and olive oil, or bacon grease, or coconut oil...)
Salt and Pepper

Preheat your oven to 400 degrees.
Toss the sprouts, mushrooms, and onion in a little olive oil. Sprinkle with salt and pepper. Spread out on a baking pan/jelly roll pan in one layer. Roast until caramelized on the outside and tender on the inside, stirring and turning once or twice. (About 25 minutes)
Serve as is or with a wedge of lemon.


Roasted Brussels Sprouts and Broccoli is a favorite here also, I served it with Beef Wellington, YUM.
