Our oven went out a few weeks ago and I had told DH I would make some pies and Creamed Spinach for a pot luck. So I decided no bake pies were the way to go. I found these shortbread crusts, NOM NOM. They may have been around for a long time but I usually don't look for premade/baked crusts. For the filling I used this recipe HERE. Except I used lime juice - YUM and 12 ounces of cream cheese.
