Fortune cookies


I first made these with my best friend, Dawn, back home years ago. They are fun to make but this isn't a cookie you bake with your little kids, older would be fine. Also be prepared to burn your hands a bit on the hot cookies while shaping them.  Work quickly, it's hot, but it probably won't really burn you. When I first made these we put red ribbons with scriptures in them and took them to church.
The ones above are a little more brown than I like, the ones in the picture below are how I like them cooked. The darker ones taste just as good. I prefer the color on the pale cookie.

Preheat the oven to 400 degrees. Melt the butter and set it aside. In a mixer beat the egg whites and sugar.

Beat until frothy....

I put the heavy cream in the melted butter so I could just pour it all in together.

Add the flour to the mixer and beat until combined.

Add the melted butter, extract and heavy cream... mix well.

Scrape down the bowl.

Place a tablespoon of batter on a well greased cookie sheet. Spread the dough out into a thin round layer- I find that the first batch is hardest, once the cookie sheet is hot the batter just melts while you spread it into the rounds.
Bake for 5-7 minutes...


I baked two at a time so I could shape them quickly, once they start hardening you can't shape them. Once out of the oven place the cookies onto a clean kitchen towel. And shape them into fortune cookies.



Fortune Cookies


  • 5 tablespoons unsalted butter
  • 4 large egg whites
  • 1 cup superfine sugar
  • 1 cup all-purpose flour, sifted
  • Pinch of salt
  • 3 tablespoons heavy cream
  • 1 teaspoon almond extract
  • Nonstick cooking spray

  1. Preheat the oven to 400 degrees. 
  2. Melt the butter and set it aside. 
  3. In a mixer beat the egg whites and sugar until frothy.
  4. Add the flour to the mixer and beat until combined.
  5. Stir heavy cream, extract, and butter together.
  6. Add the melted butter, extract and heavy cream to the flour. Mix well, scraping the dough off the sides of the bowl.
  7. Place a tablespoon of batter on a well greased cookie sheet. Spread the dough out into a thin round layer- I find that the first batch is hardest, once the cookie sheet is hot the batter just melts while you spread it into the rounds.
  8. Bake cookies for 5- 7 minutes, until lightly browned. Like the second picture in this post.
  9. Bake the cookies two at a time so that you can shape each one quickly as it comes out of the oven. Once they cool they will not be pliable.
  10. As son as they come out of the oven, use a spatula to remove them from the cookie sheet an shape them into a fortune cookie.
