GPAC Birthday Scones

I made these scones for MIL's (I call her mom, but anyway) birthday tea. It was so fun! (Scroll down for more pictures.) Sister in law and I made/set out
Chicken salad sandwiches
Cucumber Ranch sandwiches with sprouts- also posted here, from DD's birthday tea
Deviled Eggs- I just made them with mayonnaise, salt, pepper, mustard powder and paprika
Cherry Orange Scones- recipe follow, with Lemon curd
Kiwi and tangerines
Bleu cheese, prosciutto slices, Everything crackers
Olives and pickles
We bought some Palimers, cheese cake with blueberry crumble topping, German chocolate cake, rum balls, chocolate chip cookies, eclairs and these amazing buttery shortbread with raspberry preserves.
We sipped an amazing Chocolate Mint tea- YUM.

Depending on what kind of scones you want you can change up the mix ins- nuts, dried fruit, chocolate chips, butter scotch chips, peanut butter chips,  cardamon, cinnamon, make them with maple sugar, pumpkin the possibilities are endless. 

Let's make some scones!


I don't like cutting butter into flour so I either use a food processor or grate cold butter with a grater into the flour. Either way you want to cut the butter in or grate it in. (I also grate butter for biscuits- HERE is the recipe.)
See? Easy. Once grated- work fairly quick it gets warm/to room temperature quick once grated, stir gently to incorporate into the flour mixture.
Add the beaten egg, milk, cream and vanilla. Stir until combined. 

Stir in any mix ins you want.
I give it some good turns/stirs with a spatula or wooden spoon.

Put the dough between two sheets or parchment or wax paper and pat it out to 3/4 inches thick and slice.


Place on a parchment lined baking sheet or baking sheet- ungreased. Brush with cream and sprinkle with sugar. Bake in a 400 degree oven for 15-17 minutes.

Give Peas A Chance Birthday Scones

3 cups flour, 13-1/2 ounces, 385 grams
1/2 cup sugar, 3-7/8 ounces, 111 grams
5 teaspoons of baking powder, 0.8 ounces, 20 grams
1/2 teaspoon salt
1/2 cup of butter- very cold
1 egg beaten
3/4 cup cream, 6-7/8 ounces(by weight), 195 grams
1/4 cup milk, 2-3/8 ounces (by weight), 68 grams
1 teaspoon vanilla extract or almond depending on type of scones you want
2 tablespoons cream, 1 ounce, 30 grams
1 tablespoon of sugar, or vanilla sugar

 MIX in
1/4 cup chopped dried cherries
zest from one orange



  1. Mix the dry ingredients in a medium sized bowl. Add orange zest if using.

  3. Add the beaten egg, milk, cream and vanilla. Stir until combined. Stir in any mix ins you want. If the mixture is dry add a tablespoon of milk.
  4. Put the dough between two sheets or parchment or wax paper and pat it out to 3/4 inches thick and slice. You can also drop these in big mounds onto parchment and bake.
  5. Place on a parchment lined baking sheet or baking sheet- un greased. Brush with cream and sprinkle with sugar. Bake in a 400 degree oven for 15-17 minutes.
*I've forgotten or not had eggs for these and they turn out fine, they may not rise as high but still good.
*Buttermilk is a great substitution for the cream and milk.

*Depending on what kind of scones you want you can change up the mix ins- nuts, dried fruit, chocolate chips, butter scotch chips, peanut butter chips,  cardamon, cinnamon, make them with maple sugar, pumpkin the possibilities are endless. 
*Out of baking powder? Mix 1 tablespoon of baking soda and two tablespoons of cream of tartar together. Measure out as you would baking powder and store the rest!
