These were a hit with the whole family. I thought I had made too much but there wasn't any leftover! The Greek Seasoning blend is easy to make, I had everything on hand. If you don't have fried lemon zest/peel, just omit and when you're marinating add fresh lemon zest.
Serve this with some Tzatziki sauce if you like, and pita bread.
The seasoning is versatile. Use it for other meats, or in a cucumber, yogurt salad dressing, in
a vinaigrette So many things to use it with.

Greek Seasoning Blend
1 teaspoon cracked black pepper2-3 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons dried parsley
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried rosemary, chopped, or 1/2 teaspoon ground rosemary
1 teaspoon dried lemon peel
1/2 teaspoon True Lemon
1 teaspoon dried thyme
1 teaspoon fennel seed or ground fennel
1/2 teaspoon marjoram leaves
1/2 teaspoon dried spearmint, I use peppermint also
Mix together, store in a airtight container.

Boneless skinless chicken cut into bite sized pieces (lamb, pork, shrimp, or beef can be used also)Vegetables such as
Brussel sprouts
Zucchini
Onion
Bell Peppers
Jalapenos
Mushrooms
Olive oil
Greek Seasoning Blend
Lemon juice
Salt- optional
Soak the bamboo kabob skewers in water, you can dye them at the same time. They will burn less if you soak them.
Toss the chicken pieces in a little olive oil with fresh lemon juice. Toss with some Greek Seasoning blend.
In a separate bowl, toss the vegetables in olive oil, lemon juice, Greek Seasoning Blend.
Thread the chicken and vegetables on the skewers.
Grill or broil kabobs until chicken is cooked through
* I thread the jalapenos on like rings, the other pieces of food keep them in place.
Those look really good! That would be great to try this weekend. I have most of the seasonings but would have to run to the store for a few.
