Baby Bok Choy Stir Fry

This is a very simple way to prepare baby bok choy. I don't always add sesame seeds or coconut amnios- fish sauce or soy sauce (not for Whole30 though) can be substituted. Often times other than the garlic and chilies I don't add anything. It seems like it would be bland but the bok choy has great flavor and we like it. This can be served as a side dish. We've had it with Curry Pork Chops, with broiled or baked fish, with steak, over rice or quinoa.

 Whole 30

Baby Bok Choy Stir Fry

1 pound 8 ounces (680 grams) baby bok choy
1/2- 1 tablespoons cooking oil or ghee
2-3 dried Sanaam, or other dried chilies or use dried red pepper flakes
2 garlic cloves peeled and minced
1 tablespoon coconut amnios, or fish sauce, optional
2 teaspoons sesame oil
  1. Separate baby bok choy leaves if they are connected. Wash very well as they can be sandy. You can leave them whole or slice long ways into strips.
  2. Heat a pan or wok on low until hot.
  3. Add cooking oil or ghee and turn the heat up.
  4. Add garlic and red peppers and cook until fragrant but do not let them burn
  5. Add bok choy and cook until crisp tender.
  6. Stir in coconut amnios.
  7. Drizzle with sesame oil and sprinkle with sesame seeds before serving.
