Summer Squash Salad

I love summer. Beautiful, colorful, fresh, and flavorful ingredients are in abundance. You can't help but eat healthier. Lighter. This Summer Squash Salad is so very simple, I pulled the flavors from my mom's Simple Cabbage Salad . Really simple ingredients. It's easy to make. I use my Spiral Slicer, you can see it here. If you don't have one use a julienne peeler, mine looks like this here, but it's plastic.
There's no oil or mayo in this salad, it travels well. Perfect for picnics. I used Daikon in the above picture, if you can't find it just leave it out. If you have other vegetables you like that julienne well, use them!
I keep seeing people posting about how their garden is being overtaken by zucchini. I can't grow squat so please send me your zucchini and vegetables!
 Here's a salad that I made with the ribbon slicer of my Spiral Slicer.

 Give Peas A Chance Summer Squash Salad

1 medium zucchini
1 medium yellow squash
1 five inch long piece Daikon radish
1-2 jalapenos, sliced
1 cup chopped cilantro leaves
1/2 cup thinly sliced purple cabbage
1/2 cup thinly sliced red bell pepper

Dressing
Zest from one lime
Juice from 2-3 limes
Kosher salt
Fresh cracked pepper
2 cloves garlic grated with a micro plane or minced

Spiral slice or julienne the squash, and radish.
Make the dressing in a small bowl. Adjust the salt and pepper to taste. 
Toss all the ingredients with the dressing.
Serve chilled.

If you are not serving this within a day, leave the cilantro off. Add it in before serving.
Squash is watery, so the more this sits the more juice/watery it will be.
Spiral sliced carrots are great in this salad also.

  2. I have LOTS of zucchini and summer squash in my garden right now. Going to try this recipe without the peppers
