Crock Pot Spiced Holiday Wassail

A friend of mine (Becky- check out her site!) brought this over to our house when we had the Operation Christmas Child party. OK, not really this glass, but she brought some to the house. She had said there was apple juice, orange juice, and I think a pineapple/orange juice concentrate. Which she said she used part of a can of that. She also said there were spices. I didn't write it down. I don't have the best memory but it wasn't too much to remember. We had some friends over for Thanksgiving dinner on Saturday so I decided to make some. It's nice because you just throw it all in the crock pot. I added some spices and it was really good!

I thought about adding cranberries and cranberry juice but DH isn't a fan of cranberries. You can pretty much adapt this to any way you like it, I love spices so I did put a bunch of those in there. I used some fresh ginger and dried ginger- not powdered. If you don't have dried ginger, use all fresh, if you don't have fresh ginger, use candied ginger strips. I tossed in some of my Masala Chai spices I have mixed and ready to go for chai. So I broke it down for you below. Yes, that's a lot of spices, especially the cinnamon sticks. I served it with more cinnamon too. Play with the spices and use what you like. I know that most Wassail recipes don't have all these different spices, so I guess I can call this my own. I also don't add spirits.


 I didn't get a good picture because it was almost gone by the time I thought about it. I put this is my 7 or 8 quart crock pot. Make sure you have enough room, or halve the recipe. I'll be making this again for sure! So easy and so very good.
Cinnamon sticks, vanilla bean, ginger, cardamom, Masala chai spices,cloves... just some of the spices I used.

Give Peas A Chance Crock Pot Wassail

1 can frozen orange juice concentrate
1 can frozen apple juice concentrate
1 can frozen pineapple/orange juice concentrate
7-8 cans of water
1 vanilla bean
2 inches fresh ginger, peeled and cut into rounds
Zest from one orange (use a vegetable peeler to peel off big slices)
1 apple
1 teaspoon whole cloves
1 teaspoon whole all spice berries
1 teaspoon whole green cardamom, bruised
5 cinnamon sticks
2 star anise
1 vanilla bean, split

Put small spices into a spice ball. I left the vanilla bean, cinnamon sticks, and  orange zest out of my spice ball. You can add the whole orange you took the zest from also.
Place everything into the crock pot. Turn it on low or high to heat, depending on how much time you have. Once it's heated you can turn the crock pot to keep warm.
Stir well before serving with cinnamon sticks.
 (If you check out the picture at the bottom of this post, I almost filled my crock pot to the brim because we still water down juices here, and it was still plenty sweet and flavorful.)
I cut off the top of my apple because it was bruised.

  1. I used to make a Wassail years ago. I also used to make buttered rum in the crock. Those were the days!!
