Fusion Seen Dat (Lao BBQ)


This isn't a true Lao Seen Dat, the marinades and sauces I developed from flavors we enjoy. It's more a fusion I guess. But Seen in Lao is "meat", Dat means to sear. This method is used to cook meats to wrap in lettuce or rice paper wraps. It's so yummy.


I make this meal every once in a while for special occasions or weekends. It was very easy to adapt to Whole 30. I just didn't add sugar to any sauces, or oyster sauce to any marinades. It was fine, so yummy still! The key is to prepare everything before hand, even the night before.
This set up I did on December 24, 2016. There are udon noodles tofu there also. Not Whole30 but yummy.
 When you are ready, set everything out. Pull out your griddle, do you know that I have NEVER made pancakes on my griddle? Anyway, put the griddle in the middle of the table and designate raw meat tongs and cooked food tongs. Cook the meats and veggies and use the dipping sauce. If you like kimchi serve some of that along side. Sometimes we do more meats and have rice vermicelli noodles on the side to make spring rolls or lettuce wraps.

Tofu is great marinated with the Sesame Ginger Marinade, perfect for vegetarians that aren't eating paleo or whole 30. Salmon is also great with the sesame Ginger Marinade. You can bake it in the oven with this marinade or cook it en papillote also.

Use a compliant fat/cooking oil to oil the griddle at the start. I used ghee, but avocado oil is great and has a high smoking point.

Sesame Ginger Marinade/ Dipping Sauce/Salad Dressing

5 inch piece ginger, minced or grated
4 cloves garlic, minced
1/8 cup water
1/4 cup coconut amnios
salt
pepper
2 tablespoons minced cilantro leaves
Lemon or lime juice to taste, optional for a little sour

  1. Stir all ingredients together. 
  2. Season to taste.
  3. Reserve some for dipping and use the rest to marinate your meat. 
Use this marinate for chicken, beef, pork, shrimp, fish, etc.
*This also makes a great salad dressing, use just 1-2 cloves of garlic, add everything but the cilantro to a blender jar and blend. Slowly add about 5 tablespoons of neutral flavored oil. Once combined, add cilantro.

*You can also throw everything but the cilantro into a blender, Then stir in the cilantro.

Spicy Pork Belly Marinade 

3 tablespoons olive oil or avocado oil
3 tablespoons coconut amnios
2-4 cloves garlic, minced
1 tablespoon paprika
1/2-1 teaspoon cayenne pepper (optional to taste)
salt
pepper
1.5-2 pounds of sliced pork butt or sliced pork belly

  1. Place all ingredients into a bowl or plastic bag and marinate.

Spicy Fish Sauce Dipping Sauce

1/4 cup water
10 Thai bird chilies
5 cloves garlic
1-2 limes, juiced discard rinds
6 kaffir lime leaves minced
1/4 cup fish sauce

  1. Smash the garlic, chilies, and a little salt with a mortar and pestle.
  2. Stir in remaining ingredients.
  3. Season to taste.

*Or put everything in a blender and give it a whirl.

Vegetable/Fruit suggestions-

Really, most any vegetable you like we enjoy-
Mushrooms- Enoki, King Oyster, Portabello, etc
Summer squash
Potatoes, sweet or regular- thinly sliced, or partially cooked
Baby bok choy
Spinach
Watercress
Napa cabbage
Broccoli
Tomatoes
Bean Sprouts
Jalapeno slices
Pineapple
