Garlicky Pasta with Shrimp

This is a quick pasta that comes together easily. It's a great starter meal for older kids (age 8 depending on how much experience they have) to make on their own with little to no help from adults, other than draining a pasta pot! The ingredients for this is simple, but they all pack a punch. Other than the fresh herbs you may already have most of the ingredients in your pantry or freezer. Pasta, or at least the flour and water to make them. We've been using a Phillips Pasta Maker for our pasta. It's such an easy machine to use, and I've just use flour that I already have in my pantry. I haven't bought any specialty flour yet. I'll put the recipe that I use for spaghetti or angle hair pasta below. There no real sauce to this pasta, but it isn't dry. The pasta water, butter, and tomatoes coat the pasta with flavor. The shrimp should be plump with a good bite, not rubbery and over cooked. I hope you'll try this easy dish, it'll become one of your go to quick dinners!


Garlicky Pasta with Shrimp

Shrimp:
1 tablespoon olive oil
20 ounces shrimp- shelled and de veined, I used 41-50 "large"
1 clove garlic, minced
Seasoning salt

Pasta:
2-4 tablespoons butter or ghee
3-4 cloves minced garlic
1 teaspoon red pepper flakes
1/2 teaspoon dried Italian Seasoning
1 pound cooked spaghetti- reserve 1 cup cooking liquid/water
1 medium chopped tomato or 1 cup diced cherry tomatoes
salt and pepper
1/2 cup loosely packed Italian basil leaves
1/4 cup loosely packed flat leaf parsley
Lemon wedges
  1. Pat shrimp dry with paper towels if they are soggy or watery.
  2. Mix shrimp with seasoning salt, garlic, and half the oil.
  3. In a sauce pan or dutch oven heat remaining oil until shimmering over medium high heat.
  4. Cook shrimp until opaque, taking care not to scorch the bottom of the pot.
  5. Remove shrimp from the pot. Set aside. 
  6. In the same pot add butter and melt over medium heat.
  7. Add minced garlic and red pepper flakes and cook about 10-20 seconds until fragrant, do not let the garlic and peppers burn. 
  8. Add cooked noodles and tomatoes, toss in garlic butter.
  9. Add pasta water 1/4 cup at a time as needed to loosen up the pasta and create a little starchy liquid. But not too much, this isn't soup!
  10. Return shrimp to the pot and toss. Turn off the on the stove.
  11. Toss chopped or chiffionade basil leaves and chopped parsley leaves in the pasta. 
  12. Season to taste with salt and pepper.
  13. Serve with a wedge of lemon.

Pasta for spaghetti or angel hair in Philips Pasta Maker

250 gr all purpose flour
1 egg beaten plus water to make 90 gr
1/4 teaspoon garlic powder (optional)
1/4 teaspoon dried Italian Seasoning (optional)
 (I double the amount of ingredients for the Garlicky Pasta recipe above.)
  1. Select the spaghetti or angel hair pasta extruding disk and assemble the pasta machine as instructed.
  2.  Place flour and spices into the machine.
  3. Turn the machine on and select 600 gr cycle.
  4. After the machine is turned on and running slowly pour in the egg and water mixture.
  5. Once the machine is done kneading it will begin to extrude the pasta use the cutter that came with the machine to cut pasta to the length you like it. This takes about ten minutes.
  6. Cook pasta in boiling salted water for 4 minutes or until al dente.
  7. Strain and reserve 1 cup cooking liquid for the recipe.
