Tiramisu (kid friendly version)

This is a kid friendly Tiramisu version, still classic though, not with berries and berry juice- which is great for kids too. Tiramisu is one of my favorite desserts. I've made it like I said with berries before and no coffee, with coffee and toffee bits. YUM. I used decaffeinated espresso and left out liquor for the kids. It's still delish! Beating egg whites is up there with pie crusts to me, I don't like to do it so I omit that step when I make Tiramisu and I've never had a problem.
Tiramisu (GPAC Kid friendly version)
1 cup strong brewed espresso- cooled
3 egg yolks- I used pasteurized
~ 1/2 cup sugar- a little less for our tastes
8 oz Mascarpone cheese
1/4 cup heavy cream
1 package of lady fingers- not the soft ones
cocoa powder or shaved chocolate to garnish
Cooled espresso.
Put the sugar into a bowl, add two tablespoons of espresso, egg yolks and beat until light and fluffy. If you want an adult version use one tablespoon of espresso and a tablespoon of liquor- I like Kahlua.
Add the Mascarpone and heavy cream, beat well. 
To assemble, quickly dunk one lady finger into the espresso and place it into the serving dish. Line the bottom of the dish with a layer of dipped lady fingers. Don't soak the lady fingers, they get too mushy. EWW.
I lined my pan with plastic wrap for easy removal but you don't have to do that at all.
Spread half of the cheese mixture on top of the lady fingers. Add one more layer of lady fingers then top with remaining cheese. Smooth out the top and cover to refrigerate if you're adding chocolate shavings or...

Dust with cocoa powder.
Cover and refrigerate, overnight is best.
