Firecracker Chicken and Vegetable Soup

OK so Firecracker Sweet N' Spicy Rub, a little sweet with some heat. You can use Original Sweet N' Spicy Rub for this also. I had leftover chicken breasts that were broiled with Firecracker Sweet N' Spicy rub, so that was perfect to use up leftovers.



Give Peas A Chance Firecracker Chicken and Vegetable Soup

1 medium sized zucchini cubed
1 medium bell pepper cubed/chopped
1 small onion chopped
3 cloves garlic minced
olive oil
1-2 cooked chicken breasts shredded or sliced into bite sized pieces
8 cups of chicken stock or broth
2-3 tablespoons of Firecracker Sweet n' Spicy Rub
1 can black beans- drained
1 small can fire roasted green chilies- drained
1 can (about 15 oz) diced tomatoes- drained
8 oz frozen corn
1 teaspoon leaf marjoram
salt and pepper

garnish-
tortilla chips
avacado
sour cream
lime wedges
sliced jalapenos
green onion
Saute the vegetables in olive oil until crisp tender.
Add the Sweet and Spicy rub of your choice and leaf marjoram. Cook until fragrant. Salt and pepper.


Add the stock or broth. Bring it up to a boil.
Add the chicken...



and corn. Heat through and 



dish it up.
We all love the soup... well... Pixie girl (who's one) only ate the beans... I don't get her because tonight we had sliced tomatoes and she ate a ton of those.
