Ajitsuke Tamago Ramen Eggs

 Ajitsuke Tamago Ramen Eggs.  We like these with Ramen bowls, on chilled noodle salads, with sticky rice, as a snack. They are very easy to make. I like the eggs soft boiled, my middle child likes the eggs medium set.  So, cook the eggs to your liking.


Play with the spices you add to the marinade as well. Try five spice, make them spicy, leave out all the spices. Also adjust the water to your liking. Less water, the eggs will be more salty. Time spent in the marinade will also determine how salty the eggs are.


It is not necessary to move the eggs around in the marinade as long as they are covered.  If you don't mind white spots on the eggs from where they are touching the sides of your container and each other just put them in the marinade and put them in the fridge. If the white spots will bother you, move the eggs around so they are evenly colored.


I make the eggs in the Instant Pot because it gives me consistent results. It doesn't matter how you cook your eggs, as long as they are cooled and peeled.








Ajitsuke Tamago Ramen Eggs

Soft boiled eggs, cooled and peeled (5-6)
2 star anise
1/2 teaspoon whole black peppercorn
1/2 teaspoon whole Sichuan peppercorn
1-2 dried Thai chilies crushed 
3 tablespoons mirin or rice wine vinegar*
3 tablespoons tamari
3 tablespoons black soy sauce
12-16 tablespoons of water, adding more or less to taste
Sugar to taste (I don't add any sugar to my marinade)

  1. Toast the whole spices in a dry pan until fragrant, do not burn them.
  2. Add half of the water and simmer the spices for a few minutes on low heat.
  3. Turn off the heat and rice wine vinegar/mirin, tamari, black soy sauce and the rest of the water. 
  4. Let the liquid cool.
  5. Place eggs in a container or zip top bag.
  6. Pour the marinade over the eggs.
  7. Marinate for 4 to 24 hours in the refrigerator. Moving the eggs around as needed so they don't get uneven coloring.
*The marinade can be used a couple of times.
*We also use the marinade over chilled noodles with a splash of sesame oil, and sesame seeds. You can also a chopped green onion and cilantro.

Easy Instant Pot Soft Boiled Eggs


Eggs
1 cup water
Ice water
  1. Place a trivet or steamer basket in the Instant Pot.
  2. Add a cup of water.
  3. Place eggs on the trivet.
  4. Close the lid, make sure the vent is closed.
  5. Press STEAM, "normal"setting for TWO minutes.
  6. As soon as the two minutes of cook time is over, CAREFULLY release the pressure.
  7. Using tongs, put the end in an ice bath. Or pick up Instant Pot liner, carefully pour the water out without pouring the eggs out. Put ice water into the liner.
  8. Once the eggs are cool enough to touch, peel them.
It's easier to peel the eggs if they are a bit warm for me.
